Fresh Apple and Parsley Dressing with Greens (ATK)

If using a tart apple, add up to 1 tablespoon brown sugar
- 1 apple (about 7 ounces), unpeeled, quartered, cored, and cut into 1-inch cubes
- 2 tablespoons cider vinegar
- 1 teaspoon hot pepper sauce, such as Tabasco
- 1 scallion, chopped coarse
- 1/4 cup fresh parsley leaves
- 3/4 teaspoon table salt
- 1/8 teaspoon ground black pepper
- 2 - 3 tablespoons water
- 1/2 cup vegetable oil
- Greens
- 2 quarts mixed greens, washed and dried; suggestions include arugula and watercress

- 1/2 recipe plain pie pastry or vinegar pie crust, prebaked
- 3 egg yolks
- 1 cup sugar
- 1/4 cup cornstarch
- 3 cups whole milk
- 1 tablespoons butter
- 2 teaspoons vanilla
- 1 medium banana, sliced
- 1 recipe meringue
Lentil Soup

In a large soup pot, heat oil over medium heat
- 1 onion, chopped
- 1/4 cup olive oil
- 2 carrots, diced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 teaspoon dried basil
- 1 (14.5 ounce) can crushed tomatoes
- 2 cups dry lentils
- 8 cups water
- 1/2 cup spinach, rinsed and thinly sliced
- 2 tablespoons vinegar
- salt to taste
- ground black pepper to taste
Beet Sliders (DDD)

- Green Goddess Dressing:
- 5 quarts water
- 1/2 cup sea salt, plus a pinch
- 1 tablespoon dried dill
- 6 dried arbol chiles
- 1/4 cup coriander seeds
- 1 tablespoon caraway seeds
- 1 large carrot, coarsely chopped
- 2 stalks celery, coarsely chopped
- 1/2 large yellow onion, coarsely chopped
- 4 tablespoons seasoning sauce (recommended: Maggi)
- 6 to 8 whole beets (depending on size)
- Olive oil
- Green Goddess Dressing, recipe follows
- Sliced red onions, for serving
- 16 to 18 slider buns, toasted
- 1 bunch fresh tarragon, stemmed, finely chopped
- 1/2 bunch fresh parsley, stemmed, finely chopped
- 1 bunch green onions, finely chopped
- 1/2 cup buttermilk
- 1 tablespoon lemon juice
- 1/2 cup white wine vinegar
- 1 cup sour cream
- 2 cups mayonnaise
- Salt and pepper
- Combine the herbs, green onions, buttermilk, lemon juice, and vinegar in a mixing bowl. Let macerate for 10 minutes. Add the sour cream and mayonnaise, and blend with an immersion blender until creamy. Season with salt and pepper.
Short Rib Sauce (MRS)

- 2 cups ketchup
- 1/2 cup freshly squeezed lemon juice
- 1/4 cup Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 cup sugar
- 1 tablespoon salt
- 2 tablespoons minced onion

Put the onion, sweet potato, white fish, carrot, oregano, cinnamon and half of the fish stock in a saucepan
- 1/2 onion, chopped
- Generous 1 cup peeled and diced sweet potato
- 6 ounces boneless white fish fillet, skinned
- 1/2 cup chopped carrot
- 1 teaspoon chopped fresh oregano, or 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- 1 1/2 quarts fish stock
- 5 tablespoons light cream
- Chopped fresh parsley, to garnish

- 1 medium carrot, shredded on box grater
- 1/2 cup buttermilk
- 2 tablespoons mayonnaise

- 1 small shallot , minced (about 2 tablespoons)
- 2 tablespoons minced fresh parsley leaves
- 1/2 teaspoon cider vinegar
- 1/2 teaspoon granulated sugar
- 1/4 teaspoon Dijon mustard
- 1/8 teaspoon ground black pepper
Roasted Tomato Sauce (ATK)

This sauce is best with short pasta shapes, such as ziti or penne
- 2 tablespoons tomato paste
- 2 tablespoons extra virgin olive oil
- 2 teaspoons minced fresh thyme leaves
- 1/8 teaspoon red pepper flakes
- 3 pounds vine-ripened tomatoes (9 to 12 medium), cored and halved pole to pole
- 6 medium cloves garlic , peeled
- 1 small onion , peeled and cut into 1/2-inch rounds
- 1 teaspoon red wine vinegar
- Granulated sugar to taste (up to 2 teaspoons; see note above)
- 2 tablespoons chopped fresh basil
Autumn Apple Cider Vinaigrette (Big Daddy)

- 8 ounces cider vinegar
- 8 ounces apple juice
- 6 ounces brown sugar
- 2 tablespoons cracked black pepper
- 1 tablespoon cayenne
- 1 tablespoon ground cinnamon
- 2 tablespoons salt
- 1 quart canola oil

- 1/2 recipe plain pie pastry or vinegar pie crust, prebaked
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1 1/2 cups sour cream
- 1 tablespoon lemon juice
- 1/2 teaspoon baking soda
- 1 1/4 cups raisins
- 1/8 cup sweetened flaked coconut, for sprinkling
