- Crust:
- 1 cup flour
- 1/2 cup finely grated parmesan cheese
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 2 ounces cream cheese, softened
- Custard and Topping:
- 5 slices bacon, chopped fine
- 3/4 cup half and half
- 3/4 cup sour cream
- 2 large eggs plus 1 yolk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Pinch nutmeg
- 1/2 cup finely shredded Gruyere cheese
- Quiche with Scallions and Cheddar Cheese
- Prepare recipe for quiche Lorraine, substituting 1/2 cup sharp cheddar for gruyere. Add 1 minced scallion to custard with bacon. Sprinkle 1 thinly sliced scallion over quiche after it has baked for 25 minutes.
Corn Chowder (ATK)

- 6 ears corn
- 2 (15 ounce) cans whole kernel corn, drained
- 5 cups low sodium chicken broth
- 3 slices bacon, chopped fine
- 1 onion, chopped
- Salt and pepper
- 1 pound red potatoes, scrubbed cut into 1/2 inch dice
- 1 cup heavy cream
- 4 scallions, sliced thin
- With Chorizo and Chiles
- Prepare , replacing bacon with 4 ounces finely chopped chorizo sausage and replacing scallions with 1/4 cup chopped fresh cilantro. In step 2, add 1-2 jalapeno chiles, seeded and minced, and 1/2 teaspoon cumin along with onion.
- With Sweet Potatoes and cayenne
- Prepare, replacing red potatoes with 1 pound sweet potatoes, peeled and cut into 1/2 inch pieces. In step 3, stir in 1 tablespoon maple syrup and 1/4 teaspoon cayenne pepper along with cream.

- 12 slices mozzarella, about 3/4 pound
- 1/4 cup extra-virgin olive oil
- 1 yellow onion, minced
- 4 medium garlic cloves, smashed
