Because riper fruits require more acid to balance their sweetness, the lime juice should be added to taste
- 4 teaspoons sugar
- 1 teaspoon grated orange zest
- 1/8 teaspoon ground cardamom
- 3 medium nectarines (about 6 ounces each), pitted and cut into 1/2-inch pieces (about 3 cups)
- 9 ounces large green grapes, halved pole to pole (about 2 cups)
- 1 pint blueberries, picked over
- 1 - 2 tablespoons fresh lime juice (see note)
Stuffed Pepper Soup

- 9 large onions, chopped
- 6 stalks celery, chopped
- 9 cloves garlic, minced
- 10 green bell peppers, chopped
- 6 tablespoons vegetable oil
- 5 pounds lean ground beef
- 1 can crushed tomatoes
- 1 can tomato juice
- 4 cups uncooked white rice
- 15 cups beef broth
- 1 package sliced mushrooms, chopped
- 10 tablespoons chopped fresh parsley
- 10 teaspoons brown sugar
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1 teaspoon ground cinnamon
Cheddar and Scallion Drop Biscuits (ATK)

Adjust oven rack to middle position and heat oven to 475 degrees
- 2 cups unbleached all-purpose flour (10 ounces)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- 3/4 teaspoon table salt
- 1/2 cup shredded cheddar cheese (2 ounces)
- 1/4 cup thinly sliced scallions
- 1 cup buttermilk (cold)
- 8 tablespoons unsalted butter, melted and cooled slightly (about 5 minutes), plus 2 tablespoons melted butter for brushing biscuits
Frosting (ATK)

The frosting can be made up to 2 days ahead and refrigerated in an airtight container
- 24 tablespoons butter, cut into pieces and softened
- 3 tablespoons heavy cream
- 2 1/2 teaspoons vanilla
- 1/4 teaspoon salt
- 3 cups icing sugar
- Chocolate Frosting
- Prepare vanilla frosting, using just 20 tablespoons butter and adding 8 ounces semisweet chocolate, melted and cooled, in step 1. In step 2, add 3 tablespoons cocoa with icing sugar.
- Mocha Frosting
- Prepare vanilla frosting, using just 1 teaspoon vanilla. In step 2, add 3 tablespoons cocoa and 1 1/2 tablespoons instant espresso with icing sugar.
- Cherry Frosting
- Prepare vanilla frosting, omitting heavy cream and using just 1 teaspoon vanilla. In step 1, add 1/4 cup cherry preserves and 2 tablespoons maraschino cherry juice (from a jar of cherries) or grenadine syrup.
- Maple Brown Sugar Frosting
- Prepare vanilla frosting, adding 2 tablespoons brown sugar and 3/4 teaspoon maple extract in step 1.

- Glaze:
- 1 cup ketchup
- 1/4 cup packed brown sugar
- 2 1/2 tablespoons cider vinegar
- 1/2 teaspoon hot sauce
- Meat Loaf:
- 2 teaspoons vegetable oil
- 1 onion, chopped fine
- 2 garlic cloves, minced
- 2/3 cup crushed saltine crackers (about 17 crackers)
- 1/3 cup whole milk
- 1 pound 90 percent lean ground beef
- 1 pound ground pork
- 2 large eggs plus 1 large yolk
- 2 teaspoons Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/3 cup finely chopped fresh parsley

- 2 medium carrots, peeled and cut into 1/2-inch pieces (about 1 cup)
- 2 medium ribs celery, cut into 1/2-inch pieces (about 1 cup)
- 8 medium garlic cloves, peeled and crushed
- 3 cups vegetable broth
- 2 medium bay leaves
- 1 (15-ounce) can diced tomatoes, drained and rinsed
- 1 medium bunch kale or collard greens (about 1 pound), stems trimmed, leaves chopped into 1-inch pieces) about 8 cups loosely packed
- 1 sprig fresh rosemary
