Tortilla and Butternut Squash Soup (NES)

In a large stockpot melt the butter over medium-high heat
- 3 tablespoons butter
- 3 cloves garlic, minced
- 2 cups diced onions
- 3 carrots, sliced
- 3 ribs celery, sliced
- 1 pound butternut squash, peeled and diced
- 12 cups chicken stock
- 1 cup sherry
- 8 ounces salted tortilla chips
- 1/2 cup fresh cilantro leaves
- 2 cups shredded Monterey Jack cheese
- 1 can (4 ounces) diced green chilies
- 1 bunch scallions, sliced
- 2 tablespoons freshly squeezed lime juice
- 8 dashes green Tabasco sauce
- Pepper, to taste
Tart Crust (ATK)

If the dough feels too firm when you’re ready to roll it out, let it stand at room temperature for a few minutes
- 1 large egg yolk
- 1 tablespoon heavy cream
- 1/2 teaspoon vanilla extract
- 1 1/4 cups unbleached all-purpose flour
- 2/3 cup confectioners' sugar
- 1/4 teaspoon table salt
- 8 tablespoons unsalted butter (1 stick, very cold), cut into twenty-four 3/4-inch cubes
- 1 tablespoon unbleached all-purpose flour for dusting
Pecan Fudge Pie (MRS)

- 1/2 pound pork sausage
- 3/4 pound sliced fresh mushrooms
- 1/4 cup butter
- 2 frozen pie crusts, thawed and ready to

- 1 tablespoon all-purpose flour

- 1 tsp instant coffee or espresso powder
- 1 T hot water
- 4 ounces bittersweet chocolate, chopped fine
- 1/2 cup sweetened condensed milk
- 1/2 tsp vanilla
- Pinch salt
- 1 1/4 cups cold heavy cream
Spicy Lentil Soup

Combine the lentils and 7 cups warm water in a pot, cover and bring to a boil
- 2 cups red lentils, picked over and rinsed
- 1 serrano chile pepper, chopped (remove seeds for less heat)
- 1 large tomato, roughly chopped
- 1 1 1/2-inch piece ginger, peeled and grated
- 3 cloves garlic, finely chopped
- 1/4 teaspoon ground turmeric
- Kosher salt
- 1/4 cup roughly chopped fresh cilantro, plus more for topping
- 1/4 cup Greek yogurt
- Naan or other flatbread, for serving
Yellow Tomato Soup with Jasmine Rice (NES)

Bring a pot of water to a boil
- 12 large yellow tomatoes
- 3 tablespoons olive oil
- 3 whole cloves garlic, peeled
- 2 cups diced onions
- 1/2 cup diced celery
- 2 cups diced carrots
- 10 sun dried tomatoes, packed in oil
- 2 quarts chicken or vegetable stock
- 2 cups V-8 juice
- 1 bunch fresh basil leaves
- 1 tablespoon sherry vinegar
- 1 tablespoon Worcestershire sauce
- Salt and pepper
- 3 cups cooked jasmine rice

- 1/4 Cup White Wine
- 1/4 Cup Chicken Stock
- 1/4 Cup Heavy Cream
- 1 Pound of Roasted Turkey
- Salt and Pepper
- 8 Slices of Brie Cheese
- 1 Package of Puff Pastry – 2 sheets
- 1 Egg – for the pastry egg wash
- 1 Large Orange – zested and juiced
- Powdered Sugar – just keep adding until the consistency was thick enough
