- 20 pounds diced new potatoes
- 8 stalks diced celery
- 9 large finely chopped onion
- 12 carrots, shredded
- 16 oz diced cooked ham
- 12 quarts water
- 2 tablespoons beef stock
- 1 1/2 tablespoons salt, or to taste
- 1 tablespoon ground white or black pepper, or to taste
Black Bean Chili (ATK)

Serve with sour cream, shredded cheddar cheese, chopped tomatoes, and/or chopped onion
- 12 pounds mushrooms
- 6 teaspoons dry mustard
- 6 teaspoons cumin
- vegetable oil
- 12 onions, chopped
- lots of garlic, minced
- 1 can chipotle in adobo sauce, pureed
- 2 1/4 cups chili powder
- 27 cups vegetable broth
- 27 cups water, plus extra as needed
- 12 pounds dried black beans
- 3/4 cup brown sugar
- 2 teaspoons baking soda
- 12 bay leaves
- 2 large cans crushed tomatoes
- 12 bell peppers, cut into 1/2 inch pieces
Spicy Carrot Soup with Garlic Croutons (SB)

To make the soup, heat the oil in a large saucepan
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 3/4 cups sliced carrots
- 1 teaspoon each ground coriander, ground cumin and cayenne
- 3 3/4 cups vegetable stock
- Salt and pepper
- Sprigs of fresh cilantro, to garnish
- For the garlic croutons
- A little olive oil
- 2 garlic cloves, crushed
- 4 slices bread, crusts removed, cut into 1/2 inch cubes

- 1/2 cup unbleached all-purpose flour (2 1/2 ounces)

- 1 boneless beef chuck (4 to 5 pounds), pulled apart into 2 pieces and fat trimmed
- 2 teaspoons kosher salt
- 1 bottle red wine (750 ml), medium-bodied
- 10 sprigs fresh parsley leaves
- 2 tablespoons minced fresh parsley leaves
- 2 sprigs fresh thyme
- 2 bay leaves
- Ground black pepper
- 4 ounces bacon, preferably thick cut, cut into 1/4-inch pieces crosswise
- 1 medium onion, chopped fine (about 1 cup)
- 3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon)
- 1 tablespoon unbleached all-purpose flour
- 2 cups beef broth
- 4 medium carrots, peeled and cut on bias into 1 1/2-inch pieces

Preheat the oven to 375. Mist a 12 cup muffin pan with cooking spray
- Muffins:
- 1 cup dried cranberries, roughly chopped
- 1/2 cup rum or apple juice
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 3/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1 stick butter, melted
- 1 1/2 cups eggnog
- 2 large eggs, room temperature
- 1 tablespoon vanilla
- Topping:
- 1 1/2 cups flour
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1 1/2 sticks butter, melted
- 3/4 teaspoon salt
- 1 1/4 cups packed brown sugar
Split Pea and Pumpkin Soup (SB)

Soak the split peas overnight in enough water to cover them completely; drain
- 1 cup split peas
- 1 1/4 quarts water
- 2 tablespoons butter
- 1 onion, minced
- 1 1/2 cups chopped pumpkin
- 3 tomatoes, peeled and chopped
- 1 teaspoon dried tarragon, crushed
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1 vegetable bouillon cube, crumbled
- Cayenne pepper, to taste
- Sprigs of fresh cilantro, to garnish
Yellow Cake Mix (ATK)

Process sugar, flours, milk powder, baking powder, and salt in food processor for 15 seconds to combine
- 2 cups sugar
- 1 1/2 cups flour
- 1 1/2 cups cake flour
- 1/2 cup nonfat dry milk powder
- 1 tablespoon baking powder
- 1 teaspoon salt
- 16 tablespoons butter, cut into 1/2 inch pieces and chilled
- 1 tablespoon vanilla
- Lemon cake
- Prepare cake mix, pulsing 2 tablespoons grated lemon zest with sugar before adding remaining ingredients to food processor.
- Brown Sugar and Spice Cake
- Prepare cake mix, substituting 1 cup dark brown sugar for same amount of granulated sugar and adding 1 tablespoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon ground cloves to food processor.
