- 1 1/2 to 2 1/2 pounds tri-tip
- 1 carrot, peeled and sliced
- 1 stalk celery
- 1 onion, diced
- Salt
- Pepper
- Garlic, to taste
- Pinch oregano
- Trucker Special Sandwich:
- 2 tablespoons butter
- 4 slices sourdough bread
- 4 slices Swiss cheese
- Roast beef slices from the tri-tip
- 2 whole slices green chile
- 6 slices cooked bacon
Dream Bars (ATK)

Spread the coconut mixture as evenly as possible over the pecan layer, but don’t worry if it looks patchy
- Crust
- 2 cup flour
- 3/4 cup packed dark brown sugar
- 1/2 cup pecans
- 1/4 teaspoon salt
- 10 tablespoons butter, cut into 1/2 inch pieces and chilled
- Topping
- 1 1/2 cups shredded coconut
- 1 cup cream of coconut
- 2 large eggs
- 3/4 cup packed dark brown sugar
- 2 tablespoons flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 cup pecans, toasted and chopped rough
Carrot and Ginger Soup (NES)

In a large, heavy bottomed stockpot over medium-high heat, melt the butter
- 3 tablespoons butter
- 2 whole cloves garlic, peeled
- 1 large onion, peeled and diced
- 2 ribs celery, sliced
- 3 pounds carrots, peeled and sliced
- 3 tablespoons peeled and chopped fresh ginger
- 8 cups chicken or vegetable stock
- 1 teaspoon coriander
- 1 teaspoon ground ginger
- 1/2 cup honey
- 1 1/2 cups heavy cream
- Salt and pepper
Butternut, chickpea and kale soup

In a soup pot, heat olive oil over medium heat
- 1 tsp olive oil
- 1 red onion, chopped
- 2 large or 3 small cloves garlic, minced
- 3 stalks celery, chopped
- 1 bay leaf
- 1/2 tsp ground black pepper
- 1/2 tsp ground coriander
- 1/4 tsp ground turmeric
- pinch of cayenne
- pinch of dried thyme (optional)
- 5 cups vegetable broth with no tomatoes (such as Whole Foods 365 Organic)
- 4 cups diced butternut squash
- 1 14-oz. can chickpeas, drained and rinsed (1 1/2 cups)
- 1 cup reserved chickpea liquid (or substitute 1 cup vegetable broth)
- 1/4 cup tahini
- juice of 1 lemon
- 2 handfuls curly kale, torn into bite-size pieces
- sprinkle of salt
Raspberry Caramel Sauce (CS)

In a heavy bottomed pot, dissolve the sugar in ¼ cup water with a whisk
- Raspberry Caramel Sauce
- Makes 1 cup
- 1/2 cup sugar
- 3 cups frozen raspberries
- 1/2 teaspoon lemon extract or zest

- 4 pounds beef stew meat, cut into 1 inch cubes
- 1/2 cup all-purpose flour

Baked Blueberry-Raspberry Tart (ATK)

- 2/3 cup confectioners' sugar (about 2 3/4 ounces)
- 1/4 teaspoon table salt
- 8 tablespoons unsalted butter (1 stick), very cold, cut into 1/2-inch cubes
- Filling
- 6 tablespoons unsalted butter
- 1 large egg plus 1 egg white
- 1/2 cup sugar , plus 1 tablespoon
- 1/4 teaspoon table salt
- 1 teaspoon vanilla extract
- 1 teaspoon Kirsch or framboise, optional
- 1/4 teaspoon grated lemon zest
- 1 1/2 teaspoons lemon juice
- 2 tablespoons Wondra flour

- 1 1/2 cups (about 6 ounces) extra sharp cheddar cheese, grated fine
- 1/3 cup drained jarred pimentos, chopped fine

- 1/2 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
- 1 tablespoon mayonnaise
- 1 1/2 pounds 85 percent lean ground beef
- 1 tablespoon Worcestershire

Cauliflower, Potato, and Cheese Soup (NES)

- 1 cup diced celery
- 2 heads cauliflower, separated into florets
- 3 yukon gold potatoes, peeled and cut into chunks
- 10 cups chicken stock
- 4 cups shredded sharp cheddar cheese
- 2 cups light cream
- 1 teaspoon nutmeg
- 1 teaspoon dry mustard
- 3 teaspoons Worcestershire sauce
- 6 dashes Tabasco sauce
- Salt and pepper, to taste
