  • 1 medium tomato, chopped
  • 2 tbsp (25 ml) Russian-style mustard
  • 2 tsp (10 ml) white wine vinegar
  • 2 tbsp (25 ml) chopped fresh cilantro
  • salt and freshly ground pepper, to taste
