Mustard Black Beans

Soak the beans overnight, at room temperature, in at least 8 cups (2 L) of water
- 2 cups (500 ml) dried black beans
- 1/4 cup (60 ml) chopped yellow onion
- 2 cloves garlic, chopped
- 3/4 cup (175 ml) 10% cream
- 1 tbsp (15 ml) butter
- 1/4 tsp (1 ml) dried thyme
- 1/4 tsp (1 ml) dried basil
- 1 medium tomato, chopped
- 2 tbsp (25 ml) Russian-style mustard
- 2 tsp (10 ml) white wine vinegar
- 2 tbsp (25 ml) chopped fresh cilantro
- salt and freshly ground pepper, to taste

Lightly grease a rimmed baking sheet
- 1 (1/4 ounce) envelope active dry yeast
- 1/4 cup warm water water (about 105 degrees)
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 3/4 cup warm milk (about 105 degrees)
- 1/2 cup butter, melted
Roasted Broccoli with Olives, Garlic, Oregano, and Lemon (ATK)

Trim away the outer peel from the broccoli stalk, otherwise it will turn tough when cooked
- 1 large head broccoli (about 1 3/4 pounds)
- 5 tablespoons extra virgin olive oil
- 1/2 teaspoon table salt
- 1/2 teaspoon sugar
- 5 medium garlic cloves , sliced thin
- 1/2 teaspoon red pepper flakes
- 2 tablespoons finely minced pitted black olives
- 1 teaspoon minced fresh oregano leaves
- 2 teaspoons juice from 1 lemon
Shrimp Stock (CS)

Bring all ingredients to a boil in a 2 gallon stockpot with 6 cups water
- 3 cups shrimp shells (from peeled, fresh or frozen shrimp)
- 1 cup white wine
- 1 medium Spanish onion, sliced thin
- 2 stalks celery
- 2 medium carrots
- 1 tablespoon tomato paste
- 2 cloves garlic, smashed
- 1/2 bunch fresh parsley
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 tablespoons whole black peppercorns
- 1 teaspoon salt

- 1/2 recipe plain pie pastry or vinegar pie crust
- 1/4 cup butter
- 1 1/2 cups sugar
- 3 eggs

- Pastry Dough:
- 1 3/4 cups (8 3/4 ounces) unbleached all-purpose flour, plus more for work surface
- 1/2 teaspoon table salt
- 12 tablespoons unsalted butter (1 1/2 sticks), cold, cut into 1/2-inch cubes and frozen 10 minutes
- 3 tablespoons sour cream
- 1/4-1/3 cup ice water
- 1 large egg white , lightly beaten
- Custard Filling:
- 8 ounces bacon , preferably thick-cut, cut crosswise into 1/4-inch pieces
- 2 medium onions , chopped fine (about 2 cups)
- 1 1/2 tablespoons cornstarch
- 1 1/2 cups whole milk
- 8 large eggs plus 1 large yolk
- 1 1/2 cups heavy cream
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon grated nutmeg
- 1/8 teaspoon cayenne
- 6 ounces Gruyere cheese, shredded (about 1 1/2 cups)
