Sweet Scones

1. Preheat oven to 450°F 2
- 1 # [450 g or 2 cups] plain flour
- 2 heaping teaspoons, approximately 2 3/4 US, baking powder
- 1 large pinch of salt
- 25 g caster sugar, or white sugar
- 100 g chilled butter
- 280 ml milk - approximately
Ice Cream - No Cook Toffe

- 1100 mls whipping cream*
- 83 mls Dooley's Toffee Cream liquor
- 187 ml (3/4 c) white sugar
- 10 ml vanilla

- 340 g (or 12 oz) cream cheese (regular or lite)
- 212 g (or 2 cups) Monterey Jack cheese
- 212 g (or 2 cups) Cheddar cheese
- 0.25 tsp Dijon mustard
- 0.25 tsp Worcestershire sauce
- 1 clove garlic (I omit)
- 1 tsp curry powder
- 1 T cooking sherry
- 1 T mayonnaise
- 1 T sour cream (or sometimes I just add another 1 T of mayonnaise)
- 1/3 cup finely chopped green onions
- 2-3 T mango chutney
Moroccan Crock Pot Tajine (Stew)

- 3 lbs beef stewing meat (or lamb, or bone-in, whole chicken thighs)
- 2 onions
- 1 tsp each of ground cumin and paprika (used smoked)
- 1/2 tsp each of ground ginger, cinnamon, allspice and salt
- 1/2 tsp hot red chili flakes
- 2 cups carrots (in small chunks)
- 3 cups potatoes (in small pieces or 1/2 if baby potatoes)
- 10 oz consomme or beef broth (have used either)
- 1/2 sliced green olives
- 19 oz can chickpeas, drained (optional/did not use)
Italian Mussels

1. Rinse mussels and pull off beards
- 2 lbs mussels
- 1 onion
- 4 garlic cloves (I omit)
- 1 small green pepper
- 1 cup tomato sauce (the recipe called for spicy and I used Classic brand - the one with Italian Sausage, Peppers & Onions)
- (I also added a dash of hot sauce and/or cayenne)
- 1 tsp dried basil
- 1/4 cup water
- Crusty Bread or a Baguette

1. Melt butter and add celery & onions
- 4 c soft bread crumbs
- 1/2 c butter
- 1 /2 c chopped celery
- 1/4 c chopped onions
- 1 tsp salt
- 1/8 tsp pepper
- 1 tsp sage

1. Sift the white flour into a large mixing bowl
- Ingredients I
- 2 tbsp (30 mL) olive oil
- 1-1/2 cups (375 mL) diced onion
- 2 tsp (10 mL) poppy seeds
- 2/3 cup (150 mL) water
- 1 tsp (5 mL) granulated sugar
- 1 tsp (5 mL) salt
- 1 egg, lightly beaten
- 2 tbsp (30 mL) unsalted butter, softened
- 3 cups (750 mL) white bread flour
- 1-1/2 tsp (7 mL) bread machine yeast
- 1/2 cup (125 mL) shredded old Cheddar cheese

- 250 g strong bread flour
- 250 g wholemeal flour
- 10 g salt
- 2 tsp fast action dried yeast
- 1 tbsp olive oil
- 300 ml-450ml warm water
- 100 g double gloucester cheese, 75g finely cubed, 25g grated
- 1 onion, roughly chopped
Suzanne’s Thai Broccoli/Cauliflower Soup

1. In a medium saucepan, combine the broth and the uncooked wild rice
- Moderately hot
- Makes about 3.5 cups
- 3 cups chicken broth
- 1/3 cups wild rice, rinsed and drained
- 1/2 cup thinly sliced green onions (about 4)
- 3/4 cup coconut milk (regular or lite)
- 1/4 cup 1% milk
- 2 T all purpose flour
- 1/4 tsp dried thyme (or 1 tsp fresh, snipped)
- 1/8 tsp black pepper
- 1/2 cup broccoli and/or cauliflower
- 1 T cooking sherry
- 1 T fish sauce (found in the specialty food section)
- 1/2 tsp red pepper flakes (or use less if you wish)

1. In two 9 inch pie plates or one 13 x 9" baking dish, melt butter in a 400°F oven, about two minutes
- First Layer:
- 2 tablespoons butter or margarine
- 1/4 cup granulated sugar
