Mock Apple Pie - B

- • 2-9 inch pie crust pastries
- • 20 Ritz crackers
- • 2 cups water
- • 1 1/4 cups sugar
- • 2 teaspoons cream of tartar
- • 1 teaspoon cinnamon
- • 1/4 teaspoon nutmeg
- • 1 teaspoon butter or margarine
Carrot Muffins with Cream Cheese Filling (Alana's)

1. In a large bowl, combine cereal, flour, baking powder, cinnamon, nutmeg and salt
- 2 c All Bran Buds cereal or All Bran Original cereal, crushed
- 1 3/4 cups all purpose flour
- 1 T baking powder
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 egg, beaten
- 1/3 c vegetable oil
- 2/3 c brown sugar
- 1/2 c buttermilk (I used powdered and added water)
- 1 1/2 cups grated carrot
- Filling
- 1/2 c cream cheese, softened
- 1 T granulated sugar
- 1 T vanilla
- Topping
- 2 T butter, softened
- 2 T brown sugar
- 2 T flour
- 1/2 tsp cinnamon
- 1/2 cup nuts (I used mixed ones from Costco).

Curry Pork Ragout

- 2 T oil
- 1 pound lean pork cubes
- 1 onion, diced
- 2 stalks celery, diced
- 2 T AP flour
- 1.5 tsp cumin
- 1 tsp ground coriander
- 1 tsp curry powder
- 1/4 tsp crushed chilis
- 1 c chicken stock
- 1/2 unsweetened orange juice
Ron Shewchuk's Classic Baked Beans

Great, dark beer makes a wonderful sauce
- 19 oz can of white kidney beans
- 19 oz can of red kidney beans
- 19 oz can of black beans
- 0.5 # smoked bacon (recipe called for 1#; I used maple bacon)
- 1 large onion, diced
- 1 T chili powder
- 1 tsp cumin
- 2 tsp canned chipotles in adobo sauce, finely chopped (found with Mexican foods)
- 3/4 cup dark brown sugar (recipe called for 1.25 c)
- 3 T molasses (I omitted)
- 1 bottle Guinness Beer (or any dark beer)
- Salt and Freshly Ground Pepper

- 1 tablespoon vegetable oil
- 3/4 cup finely diced onion
- 1/2 cup milk
- 1 egg, beaten
- 1 1/2 cups biscuit mix
- 1 cup shredded sharp Cheddar
- 1/2 teaspoon onion salt
- 2 tablespoons melted butter
- 1 tablespoon chopped fresh chives or parsley leaves

- 2 cups cubed fully cooked ham
- 4 cups cubed cooked chicken (I used thighs)
- 1 cup shredded Swiss cheese
- 1 large onion, chopped
- 1/3 cup butter, cubed
- 1/3 cup all-purpose flour
- 1/8 teaspoon ground mustard
- 1/8 teaspoon ground nutmeg
- 1.75 cups whole milk
- 1.5 cups soft bread crumbs (I used 1/2 Panko and 1/2 dry seasoned)
- 1/2 cup shredded Swiss cheese
- 1/4 cup butter, melted
Crock Pot Ham & Bean Soup

- 2 cups of Bob’s Red Mill 13 Bean Soup Mix (Nutters)
- Ham hock with plenty of meat on
- Ham cut into chunks
- 1 cup of chopped onion
- 15 oz can of tomatoes (I also added a few small tomatoes chopped)
