Openface Crab Muffins

1. Mix blended cottage cheese, Parmesan cheese, green onion, Tabasco or Worchester sauce together in a mixing bowl
- 3/4 cup low-fat cottage cheese, blended
- 1/4 cup Parmesan cheese
- 1/3 cup green onions, finely chopped
- Tabasco sauce to taste
- 2 teaspoons of Worchester sauce
- 12 ounces imitation crab, shredded
- 6 English muffins split in half or substitute rice cakes
Easy Rice and Tuna Mothers

Preheat oven to 375°F. 1
- 2 teaspoons butter
- 1 large onion, chopped
- 2 celery stalks, chopped or one suite pepper, chopped
- 1/3 cup milk
- 10 ounce can of condensed cream of celery soup
- 1/3 cup uncooked rice
- 6 1/2 ounces of canned tuna, drained
Caesar Salmon Sandwich

1. Combine dressing and dill
- 3 T light creamy caesar dressing
- 1/2 tsp dried dill weed or 1 1/2 tsp fresh
- 7 oz canned salmon, drained
- 1/2 english cucumber
- 2 onion rolls, about 4 inches across
BROWNIE SLICE (Charlotte Salte)

First Layer Mix sugar and cocoa together
- First layer:
- 2 cups sugar
- 1/2 cup cocoa
- 4 eggs
- 1 cup margarine (melted)
- 2 tsp. vanilla
- 1 1/2 cups flour
- 1 tsp. salt
- 1 1/2 cup chopped walnuts
- Second layer:
- 1 cup margarine
- 1 1/2 cup brown sugar
- 4 Tbsp. flour
- 1 can eagle brand milk
- 2 Tbsp. corn syrup
- Melt in a double boiler. (I do it in the microwave oven). Bring to a small boil. Pour over baked first layer and bake another 10 minutes at 350 degrees.
- Cool and top with a chocolate icing. I use a container of frosting- milk chocolate or other type chocolate frosting.
B's Chocolate Pate with Raspberry Coulis

Chocolate Pate 1. Line a 9 X 5 X 3 inch dampened loaf pan with plastic wrap

- 1 cup butter (not margarine)
- 3 cups semi sweet chocolate chips
- 1 tsp instant coffee granules, crushed to a powder (option, B uses)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla
- 1 1/2 cups whipping cream
- Raspberry Coulis
- 15 oz frozen raspberries, in syrup, thawed
- 2 T granulated sugar
- 4 tsp cornstarch
