Ham & Potato Soup

Combine the potatoes, celery, onion, ham and water in a stockpot
- 3 1/2 cups peeled and diced potatoes
- 1/3 cup diced celery
- 1/3 cup finely chopped onion
- 3/4 cup diced cooked ham
- 3 1/4 cups water
- 2 tablespoons chicken bouillon granules
- 1/2 teaspoon salt, or to taste
- 1 teaspoon ground white or black pepper, or to taste
- 5 tablespoons butter
- 5 tablespoons all-purpose flour
- 2 cups milk
Award Winning Chocolate Chip Cookies

Preheat oven to 350 degrees F
- 4 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 cups butter, softened
- 1 1/2 cups packed brown sugar
- 1/2 cup white sugar
- 2 (3.4 ounce) packages instant vanilla
- pudding mix
- 4 eggs
- 2 teaspoons vanilla extract
- 4 cups semisweet chocolate chips
- 2 cups chopped walnuts (optional)
Ice Cream Cookie Cups

Let dough stand at room temperature for 5-10 minutes to soften
- 1 tube (16 1/2 oz) refrigerated chocolate chip cookie dough
- 2 cups ice cream
- whipped cream and chocolate syrup
- 1/3 cup English toffee bits
Cheddar Mashed Potato Casserole

COOK potatoes in boiling water in large saucepan 20 min
- 2 lb. Yukon gold potatoes (about 6), peeled, quartered
- 2 Tbsp. butter
- 1/2 cup Sour Cream
- 1 cup Shredded Cheddar Cheese
- 6 slices Bacon, cooked, crumbled
Ice Cream Torte

Place 6 ice cream sandwiches in a row on waxed paper in a 9x13 inch dish
- 12 frozen ice cream sandwiches, unwrapped
- 1 package (3.9 oz) chocolate instant pudding and pie filling
- 1/2 cup milk
- peanut butter
- chocolate and peanut butter cups, chopped
- 1 8 oz container whipped topping, thawed
Potato & Pepper Frittata

HEAT oven to 350°F. COOK bacon in medium nonstick ovenproof skillet 4 min
- 6 slices Bacon, chopped
- 1 cup shredded potatoes
- 1/4 cup chopped onions
- 6 eggs, beaten
- 1 cup Mexican Style Finely Shredded Cheddar Pepper Jack Cheese
- 1/2 cup green pepper rings
Hanky Pankies

Crumble and cook sausage in a large saucepan over medium heat until browned
- 1 pound ground pork sausage
- 3 tablespoons minced onion
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1 cup Velvetta sauce (or if you buy the block, cut into small chunks,
- 8 oz = 1 cup)
- 16 ounces cocktail rye or pumpernickel bread
Jenn's No Bake Peanut Butter Pie

Everyone loves this one!
- 1 (8 oz) package cream cheese, softened**
- 1 1/2 cups confectioners sugar
- 1 cup peanut butter**
- 1 cup milk**
- 1 (8 oz) package frozen whipped topping, thawed
- 2 (9 inch) prepared graham cracker shells*
- *Can also use smaller individual pie crusts.
- **Can be made with reduced fat ingredients.
- ***Can add chocolate syrup and/or chopped peanuts or chopped peanut butter cups to top.
Slow Cooker Fiesta Chicken with Rice & Beans

Combine tomato sauce, tomatoes, rice, broth, beans, chicken and seasoning mix in slow cooker
- 1 can (15 ounce size) tomato sauce
- 2 cans (14.5 ounce size) diced tomatoes with mild green chilies, undrained
- 1 cup long-grain rice
- 1 can (14.5 ounce size) chicken broth
- 1 can (15 ounce size) pinto beans, undrained
- 1 pound boneless skinless chicken thighs or breasts
- 1 package (1 ounce size) chicken taco seasoning mix
Mexican Cheese Dip

Bake 350 degrees for about 20 minutes
- 8 oz or the small bag of finely shredded sharp cheddar cheese
- 1 cup of light mayo
- 1 can of chopped green chilies (it is a very small can...the smallest it comes)
- 1 very small can of the finely chopped olives (I only use about 1/2 of can)
- dash of garlic powder, salt, pepper
