Brown Sugar Muffins

Cream first ingredients, then add the rest
- 1/2 c shortening
- 1 c brown sugar
- 1 egg

- 1 t soda
- 1 c. milk
- 2 c flour
- 1/2 t vanilla
Chicken Black Bean Enchiladas

Cut chicken into thin strips
- TOPPINGS:
- 3/4 # chicken breasts
- 3 slices bacon
- 2 cloves garlic, minced
- 1 1/2 c salsa
- 1 can black beans, undrained
- 1 lg. red bell pepper, chopped
- 1 t cumin
- 1/4 t salt
- 1/2 c green onion, sliced
- 12 flour tortillas
- 1 1/2 Monterrey jack cheese
- shredded lettuce
- chopped tomato
- avocado
- sour cream
Spaghetti Meat Sauce in Crockpot

Brown sausage and hamburger; drain well
- 1/2 lb. sweet or italian sausage
- 1 lb. hamburger
- 1 small chopped onion
- 1 chopped green pepper
- 2 minced cloves garlic
- 2 T. sugar
- 1 T. salt
- 2 tsp. basil leaves
- 1/8 tsp. crushed red pepper
- 2 cans diced italian style tomatos
- 1 (18-oz.) can tomato sauce
- 1 (6-oz.) can tomato paste
- 1 small can sliced olives
- 1 small can sliced mushrooms or 1/2 lb. fresh
Sky High Biscuits

In a large bowl combine first five ingredients
- 3 c. flour(2c. white and 1c wheat)
- 4 1/2 t. baking powder
- 2 T. Sugar
- 1/2 t. salt
- 3/4 c. butter
- 1 egg
- 1 c. milk
Buffalo Chicken Dip

Mix in baking dish. Bake @ 350* for 20 minutes
- 1 8oz pkg. cream cheese softened
- 1/2 c franks red hot sauce
- 1/2 c blue cheese dressing
- 1/2 c blue cheese crumbles
- 2 c cooked chicken
Cocoa Mix

To Use: 1/2 c powder to 1 c water
- 6 c non instant powdered milk (10 2/3 instant)
- 6 oz jar powdered non dairy creamer
- 16 oz chocholate quick
- 1/2 c powdered sugar
Creme De Menthe Bars

Melt chocolate in oil. Spread over top of middle layer, refrigerate
- BOTTOM LAYER:
- 3 squares unsweetened chocolate; melted
- 2 c firmly packed brown sugar
- 3 eggs
- 1 1/4 c flour
- 1/2 t salt
- 1/4 t baking soda
- 1 t vanilla
- Mix all ingredients together ans spread on greased cookie sheet or 9x13 pan. Pop into 350* oven for 25-30 minutes. Done when toothpick comes out clean. Cool
- MIDDLE LAYER:
- 4 cups powdered sugar
- 2 T Cream
- 2 sticks butter
- 1/2 t peppermint extract
- Mix all ingredients together and spread over cooled bottom layer. Refrigerate till firm.
- TOP LAYER:
- 1 c semisweet chocolate chips
- 1 c milk chocolate chips
- 3T oil
Graham Cracker Crust

Crush crackers into fine crumbs
- 8 graham crackers(halfs)
- 6 T butter melted
- 3 T sugar
Stuffed Vegetable Filling

Beat til smooth. place in pastry bag with star tip and fill veggies
- Veggies of your choice:
- 1 8oz pkg cream cheese
- 1/3 c grated Parmesan cheese
- 1 t milk
- 1/2 t Italian seasoning
- 1/8 t black pepper
- Cherry tomato
- slices cucumber
- celery
- red bell pepper
- mushrooms
Cottage Cheese

When a firm curd has formed, cut into 1/2 inch squares and set in a pan of hot water
- In a large pan, dissolve:
- 1/4 rennet tablet in 2 quarts warm water.
- mix in:
- 3 C non-instant milk powder
- 1/2 C buttermilk
- Be sure to completely dissolvethe milk. Allow to stand in warm room until set. (5-10 hours)
