Cherry Vanilla Ice Cream Popcorn

This recipe can also be doubled successfully
- 1/2 cup unpopped popcorn kernels
- 1/4 cup (1/2 stick) butter
- 1/4 cup white corn syrup (Karo)
- 1/8 cup water
- 1 cup granulated sugar
- 1/4 teaspoon baking soda
- 2 teaspoons Cherry Flavor
- 1/2 teaspoon New York Vanilla Flavor
- 2 drops of Americolor “Red Red” food coloring gel or equal
Tortilla Soup

bake strips at 350* for 6 min
- 3-6 corn tortilla's cut in strips
- 1 16oz can tomatoes
- 1 4 oz can green chile
- 1 large onion chopped
- 1 medium green pepper chopped
- 4 c chicken broth
- 1 c cooked chicken shredded
- 1 clove garlic
- dash of tabasco sauce
- salt to taste
- 1 T lime juice
Shrimp Fetucinee

Cook Fettuccine noodles. While cooking, bring first ingredients to a boil, Whisking constantly til thick

- 1 cube butter

Cherry or Blueberry or Apple pie filling

Warm fruit. In a seperate kettle, combine sugar, cleargel; stir; add water and color
- for blueberry:
- 6 qts berries
- 6 c sugar
- 2 1/2 c clear gel
- 7 c water
- 1/2 c lemon juice
- 20 drops blue and 7 red of food coloring
- for apple:
- 7 drops yellow
- 1 t cinnamon
- for cherry:
- 1/4 t red food coloring
- 1 t cinnamon
- 2 t almond extract
Cafe Rio Chicken and Rice

Let water come to a boil, add rice and blended ingredients
- Chicken:
- 5 lbs. boneless chicken breasts
- 1 bottle zesty italian dressing
- 1 t. chili powder
- 1 T cumin
- 3 cloves garlic minced
- Put in crock pot for 4 hours then sherd and replace for 1 hr more to soak up the juice.
- Rice:
- 3 c water
- 3 c rice
- Blend in blender and add the following:
- 4 t. chicken buillion
- 4 cloves garlic
- 1/2 bunch cilantro
- 1 can green chili
- 3/4 t. salt
- 1 T butter
- 1/2 onion
Fresno Apricot Bar

Coer apricots with waterin saucepan and simmer uncovered for 10 minutes
- 2/3 c dried apricots
- 1/2 c butter at room temp.
- 1/4 c white sugar
- 1 1/3 c flour, sifted , divided
- 1 c brown sugar
- 2 eggs, well beaten
- 1/2 t baking powder
- 1/4 t vanilla
- 1/2 c walnuts, chopped

Combine broth, beans, corn, tomatoes, scallions & seasonings Lay chicken on top Cook on low till chicken is cooked ...
- 1 1/2 lbs. chicken breasts (3-4)
- 14.4 oz can diced tomatoes with green chilies (or with cilantro)
- 15 oz. can black beans (drained and rinsed)
- 8 oz. frozen corn (or you can used canned corn, just put them in the crock pot later on)
- 1 C. chicken broth (or 14 oz. can)
- scallions, chopped (to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp cayenne pepper
