BOB COBB SALAD

This is the original salad created by Robert Cobb in 1937 and was served at the Hollywood Brown Derby restaurant
- 3 hard boiled eggs, peeled
- 8 bacon slices
- 1 head romaine, leaves torn into bite-size pieces
- fresh herbs (your choice)
- 2 cups chopped watercress lettuce (tough stems removed)
- 4 cups diced cooked turkey or chicken
- 2 avocados, pitted, peeled, diced
- 2 tomatoes, chopped
- 1/4 lb plus 1 oz Roguefort cheese, crumbled
- 1/4 cup red wine vinegar
- 1 tsp worchestershire sauce
- 1/2 tsp dijon mustard
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/2 tsp ground black pepper
- 1/3 cup extra virgin olive oil
WILD RICE WITH APPLES

1. Melt 1 tablespoon butter in a large saucepan over medium-high heat
- 2 tablespoons butter, divided
- 2 cups chopped Pink Lady apple
- 1 cup chopped leek
- 2 garlic cloves, minced
- 3 cups fat-free, less-sodium chicken broth
- 2 cups water
- 1 cup apple cider
- 1 teaspoon chopped fresh thyme
- 2 cups uncooked wild rice
- 1/3 cup chopped pecans, toasted
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
BROCCOLI CRANBERRY SALAD

Generally use Truvia rather than sugar and a canola type mayo to reduce the calories, but my family doesn't know it
- Ingredients For Dressing:
- 2 heads broccoli, cut into small florets
- 2/3 cup dried cranberries (sometimes called craisins) or
- raisins
- 1/2 lb crisp, drained bacon, crumbled
- 1/2 cup chopped red onion
- 1/2 cup chopped walnuts or 1/4 cup sunflower seeds or
- 1/4 cup pine nuts (I use toasted pine nuts)
- 1 cup cheddar or montery jack cheese, shredded
- ( I don’t use any cheese)
- 1/4 cup sugar substitute
- 1 cup mayo (preferably low fat)
- 2 tbs apple cider vinegar (I use raspberry vinegar)
- Salt/Pepper to taste
CARDINI CAESER SALAD

This is not the orignial Cardini recipe, but served by a chef in NY
- Crouton Ingredients:
- 2 large garlic cloves --crushed
- Pinch of salt
- 3 tablespoons virgin olive oil
- 2 cups French baguette slices cut up into 1/2 inch
- cubes (white bread works too)
- Salad Ingredients:
- 1 large egg 1 teaspoon capers
- 1 teaspoon Worcestershire 1 teaspoon Dijon mustard
- sauce 1/3 cup virgin olive oil
- 3 tablespoons fresh lemon 2 medium heads of romaine
- juice lettuce --outer leaves
- 1 medium garlic clove, removed
- crushed 1/3 cup Parmesan cheese -
- 1 pinch salt grated
- 1/2 teaspoon freshly ground
- pepper
- 1 1/2 teaspoons anchovy
- paste or 4 flat anchovies
- minced
CROQUE MONSIEUR SALAD

Great salad to serve with grilled pizza
- Ingredients for Lemon-Basil Vinaigrette:
- 3 tbs olive oil
- 1/2 tsp Dijon Mustard
- 1/4 cup chopped fresh basil or 1 tsp dried, crumbled
- 1 1/2 tbs red wine vinegar
- 1 tsp lemon juice
- 1 pinch sugar or 1/2 pkt substitute
- Ingredients for Salad:
- 1/2 tsp olive oil
- 3 cloves minced garlic
- 1 cup fresh grated Parm cheese
- 2 tbs fresh grated Parm cheese
- 4-5 cups mixed greens
- 1/2 tsp butter or margarine
- 1 cup julienne strips cooked ham or turkey
BARBECUED TURKEY DRUMSTICKS

n small saucepan, combine all ingredients except turkey
- 4 Shady Brook Farms Turkey Drumsticks, approx. 4 lbs.
- 2 lg. garlic cloves, minced
- 1 c. chili sauce or ketchup
- 1/4 c. vegetable oil
- 1/3 c. cider vinegar
- 1/4 c. chopped onion
- 1 1/2 tbsp. Worcestershire sauce
- 1/2 tsp. salt, or to taste
- 1/4 tsp. freshly ground pepper
- 1/4 tsp. thyme
VANILLA BEAN CAKE

- 7 oz white chocolate, chopped
- 5 large eggs, separated
- 1/3 cup sugar
- 7 tbs unsalted butter
- 2 vanilla beans, split, scraped
- 1/3 cup bread flour, sifted
- Pinch cream of tartar
PRIME RIB ROAST

I had always wanted to roast one of these, but I don't eat red meat and my SO doesn't like rare beef
- Cooking twine
- 7 lb 3 rib roast
- Salt and pepper to taste
RED WINE SPAGHETTI SAUCE

This recipe can be used for spaghetti sauce or lasagne
- 1/2 large yellow onion, diced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh garlic
- 8 oz mushroom, chunked (perferably portabello)
- 1 Tbs olive oil
- 1 28 oz. can diced tomato (preferably fire roasted)
- 1/3 cup chopped sundried tomato in olive oil, packed
- 1/2 Tbs dried Basil
- 1 tsp dried oregano
- 1 tsp dried marjoram
- 1/4 cup tomato paste
- 1.5 lbs ground chuck
- 1.5 lbs ground sirloin
- Garlic powder, salt and pepper to taste
- Halved green olives, optional
- Fresh grated Parmesan cheese
