SMOKEY GRILLED BUTTERFLIED CHICKEN

Bird can be placed directly on grill or in a roasting grate
- 1/4 cup sherry vinegar
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 tbs smoked paprika
- 1 tbs coarse salt
- 1 whole chicken (3-4 lbs)

- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp baking powder
- 8 oz (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar (light brown)
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 1/2 cups old fashioned oats
- 6 oz semisweet chocolate, cut into 1/4 inch chunks (1 cup)
- 3 oz pecan halves (3/4 cup)
- 1/2 cup shredded unsweetened coconut

- 1 stick (4 oz) unsalted butter
- 2 large onions, finely chopped
- 8 thyme sprigs
- 4 bay leaves
- 2 3 lb chickens, cut up into 8 pieces (if using all breasts,
- cut in half)
- 1/4 cup chicken broth
- salt/pepper
GINGER LEMON BARS

You can top with slivered almonds to give it a nice presentation
- 5 oz. (1 cup + 2 tbs) All Purpose Flour
- 6 1/4 oz (1 3/4 cups + 1 tsp) Conf. Sugar
- 1 tbs. Finely grated lemon zest
- 1/2 tsp. + pinch (less than 1/8 tsp) Ground Ginger
- Table Salt
- 4 oz. (1/2 cup) chilled unsalted butter, cut into
- small pieces and additional butter for pan
- 1/2 tsp. Baking powder
- 3 large eggs At room temperature
- 6 tbs Fresh lemon juice
GRAND MARNIER CREME BRULEE

The brulee will be warmer if you use shallow dishes rather than ramekins
- 6 large egg yolks
- 2 1/4 cups whipping cream 2 tsp vanilla extract 7 tbs sugar
- 2 tbs Grand Marnier
GRILLED TEX MEX CHICKEN WINGS

Barbecued Tex-Mex Wings
- 2-1/2 pounds precut chicken wings, or whole wings cut
- into 2 pieces at joint, tips discarded
- 1/2 cup ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup honey
- 1/2 cup packed light brown sugar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon onion powder
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon hot red pepper sauce
- 1 teaspoon mesquite-flavored liquid smoke
- Instructions
- Wash wings and pat dry.
PARMESAN CRUSTED CHICKEN BREAST

Preheat oven to 450. Whisk egg whites, cornstarch and lemon juice in shallow bowl for dipping
- 2 Boneless skinless chicken breast halves
- 2 egg whites
- 2 tsp cornstarch
- 1 tbs lemon juice
- 1 cup coarse bread crumbs - ready to use
- 1/2 cup Parmesan cheese, grated
- 1 tbs fresh chopped sage
- 1 tsp kosher salt
- 1/4 tsp black pepper
- Zest of one lemon
- 3 tbs olive oil
LEMON POPPY SEED MUFFINS

Can be frozen individually; bring to room temp
- 2 cups all purpose flour
- 2 tbs confectioner’s sugar
- 1 1/2 tbs grated lemon peel
- 1 tbs poppy seeds
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk (low-fat)
- 1/2 cup honey
- 3 tbs butter, melted
- 1 large egg, lightly beaten
- 2 tbs confectioner’s sugar
- 2 tbs honey
- 2 tsp fresh lemon juice
GRILLED THAI CHICKEN

Butterflying the chicken permits it to cook quickly without drying out
- Marinade
- 15 cloves garlic
- 1/4 tsp kosher salt
- 1 tsp coriander seeds, toasted and ground
- 1 tbs white peppercorns, toasted and ground
- 1 bunch cilantro stems (3/4 cup minced)
- 1/4 cup soy sauce
- 2 tbs vegetable or olive oil
- Chicken
- 1 chicken, 3-4 lbs or 16 chicken wings, rinsed
- and patted dry
- Vegetable or olive oil spray
