GERMAN POTATO SALAD

Place potatoes in a large pot with the yellow onion and cover with cold water
- 3 lbs new potatoes
- 1 yellow onion, quartered
- 1/2 pound bacon, diced
- 1 large red onion, diced
- 3/4 cup cider vinegar
- 1 tablespoon Dijon mustard
- 1/4 cup canola oil or olive oil
- Salt and freshly ground pepper
- 8 green onions, thinly sliced
- 1/4 cup chopped fresh parsley leaves
LINGUINE WITH ARUGULA PESTO & PANCETTA

1. Drop garlic clove through the spout of a food processor (or blender) while motor is running
- 1 Garlic clove
- 3 cups packed arugula
- 1/3 cup toasted sliced almonds
- 1/4 cup grated gorgonzola cheese
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1/4 cup olive oil
- 1/4 cup canola oil
- 450 g linguine
- 100 g pancetta, diced (about 3/4 cup)
CHICKEN STIR-FRY

Rinse chicken and pat dry
- 2 lbs boneless skinless chicken breasts
- 2 large garlic clones, minced
- 2 tablespoons reduced-sodium soy sauce
- 4 teaspoons cornstarch
- 1 teaspoon ground ginger
- 1 cup fresh orange juice
- 4 teaspoons peanut oil
- 1 lb shiitake or portabello mushrooms, stems discarded, thinly sliced
- 1 1/2 cups coarsely grated carrot
- 2 celery stalks, sliced
- 4 cups cooked brown rice Sliced scallion, for garnish
BALSAMIC & BASIL CHICKEN

Brown chicken and place in shallow baking dish
- 8 chicken breast pieces
- 1/4 cup butter
- 1/3 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup balsamic vinegar
- 1 clove garlic, minced
- 2 tbsp fresh basil
- Salt and pepper
SWEET & MILD MAPLE GRILLED SALMON

Preheat grill to medium high (450 to 500F)
- 4 boneless, skinless fillets of salmon, 6 oz
- 1 tbsp cracked black pepper
- 2 tsp coarse sea salt
- 2 tbsp olive oil
- 4 tbsp Maille Sweet & Mild Mustard
- 2 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 4 sprigs fresh dill
JALAPENO CREAM CHEESE DIP

Mix all together, and serve with rice crackers

GOAT CHEESE WITH CHIPOTLE & ROASTED RED PEPPER

Toast cumin seeds in small skillet over medium heat until fragrant, stirring often, about 2 minutes
- 1 teaspoon cumin seeds
- 1 11-ounce log soft fresh goat cheese
- 1 cup drained roasted red pepper strips from jar
- 1/4 cup extra-virgin olive oil
- 2 teaspoons chipotle hot sauce
- 1 small garlic clove, pressed
- 1/4 cup chopped fresh cilantro
- 2 tablespoons toasted salted pumpkin seeds (pepitas) toasted
- Baguette slices or crackers
SPINACH & BASIL SALAD WITH TOMATOES, WALNUTS & WARM BACON DRESSING

In a large salad bowl, toss the spinach and basil
- 8 ounces (5 1/2 lightly packed cups) baby spinach leaves, washed and dried
- 1 cup lightly packed fresh basil leaves, washed and dried
- 6 slices bacon
- 2 tablespoons white-wine vinegar
- 1/2 tablespoon Dijon mustard
- 1/3 cup plus 2 teaspoons olive oil
- Sea salt and freshly ground black pepper
- 1 pint grape tomatoes, washed and dried
- 1/2 teaspoon kosher salt
- Candied Walnuts
BAKED CRAB DIP

In a bowl, combine crab, cheese, onions, jalapeno to taste, sour cream, mayonnaise, lemon juice and cilantro
- 1 cup cooked drained crabmeat
- 1 cup shredded Monterey Jack cheese
- 2 green onions, white part with a bit of green, minced
- 1/2 to 1 jalapeno pepper, minced
- 3 tbs each full-fat sour cream and mayonnaise
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp finely chopped cilantro leaves
- Salt and freshly ground pepper
WHOLE WHEAT RASPBERRY MUFFINS

Combine dry ingredients. Combine liquid ingredients
- 1 cup whole wheat flour
- 1 cup unbleached flour
- 1/2 tsp salt
- 1 egg, lightly beaten
- 1/2 cup honey
- 1/4 cup oil
- 3/4 cup milk
- 1 1/2 cups unsweetened fresh or frozen raspberries (patted dry or well drained) - can substitute blueberries
