ASPARAGUS WITH PEANUT DRESSING

Dressing: Combine all ingredients in a food processor or blender, cover and store in the refrigerator
- DRESSING:
- 1/2 cup chunky peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon lemon juice
- 2 cloves garlic, crushed
- 1 teaspoon Chinese chili sauce
- 2 tablespoons brown sugar
- 1 cup plain yogurt
- 2 tablespoons toasted sesame seeds
- ASPARAGUS:
- 36 to 42 asparagus spears (allow 6 per person)
- Zest of 1 lemon
- 1/2 cup toasted sesame seeds
- 1 leafy or butter lettuce
ROASTED LEMON-GINGER GLAZED CARROTS

Preheat oven to 425*F. Toss the carrots with oil, salt and pepper
- 2 lbs baby carrots
- 2 tbsp canola oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp lemon juice
- 1 tbsp honey
- 1 tbsp freshly grated gingerroot
- 3 cloves garlic, sliced lengthwise
- 8 to 10 sprigs fresh thyme
- 2 tbsp chopped fresh parsley
ROASTED EGGPLANT & CHEDDAR DIP

Preheat oven to 375F. On a parchment-lined baking sheet, place eggplant halves flesh side up
- 1 eggplant, cut in half lengthwise
- 2 tbsp olive oil
- 1/4 cup sour cream
- 1/2 cup Black Diamond White original Cheese Spread
- 1 tsp cumin
- 1/4 tsp chill powder
- 1/4 tsp ground coriander
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 tsp lemon juice
- 3 tbsp & 2 tsp fresh parsley, chopped
SPANISH RICE (WITH SAUSAGE)

Heat a large saucepan over medium
- 2 tsp olive oil
- 1 medium onion, finely diced
- 1 garlic clove, minced
- 1 cup long grain rice
- 1 tbsp tomato paste
- 1 tsp paprika
- 2 cups chicken broth
- 1/2 of 250 gm garlic sausage, thinly sliced
- 1 red pepper, sliced into thin strips
- 1 yellow pepper, sliced into thin strips
- 1/2 cup pitted green olives
BLUEBERRY SAUCE (for pancakes)

In saucepan, combine blueberries, water, honey, lemon juice and spices
- 2 cups blueberries
- 1/2 cup water
- 1/3 cup honey
- 1 tbsp lemon juice
- Pinch of cinnamon & nutmeg & salt
- 2 tsp cornstarch
- 2 tbsp water
LE GOURMET SALAD DRESSING

Mix mayonnaise, vinegar, Tabasco, Worcestershire and salt and pepper together in a bowl
- 1 cup mayonnaise
- 3/4 cup oil
- 3-4 tbsp tarragon vinegar
- 2-3 drops Tabasco sauce
- 2-3 drops Worcestershire
- 2-3 gherkins
- 1/2 oz capers
- Salt and pepper to taste
- Consomme or bouillon to thin
- 1 small onion, chopped

- 2-1/4 cups (550 mL) unsalted shelled pistachios, toasted
- 1/2 cup (125 mL) icing sugar
- 6 egg whites
- 3/4 cup (175 mL) granulated sugar
- Pinch salt
- Lemon Mousse:
- 2 eggs
- 2 egg yolks
- 2/3 cup (150 mL) granulated sugar
- 2 tbsp (30 mL) grated lemon zest
- 1/3 cup (75 mL) lemon juice
- 1 tsp (5 mL) potato starch or cornstarch
- 3/4 cup (175 mL) pareve nondairy whipped topping or whipping cream 35%
ROASTED VEGETABLES WITH WALNUT VINAIGRETTE

Position oven racks in top and bottom thirds of oven
- Vinaigrette:
- Olive Oil
- Thyme
- Rosemary
- Sweet Potatoes
- Beets
- Carrots
- Turnips
- Fennel
- Onions
- Walnuts
- Salt and Pepper
- 1/3 cup walnut oil
- 3 tbsp white wine vinegar
- 2 tsp orange zest
- 3 tbsp orange juice
- Salt and Pepper
- Parsley
SHRIMP SALAD WITH CUCUMBERS & ROASTED PEANUTS

Salad Dressing: Whisk together all dressing ingredients in a small bowl; let stand while preparing the salad
- Salad Dressing:
- 1/4 cup fresh lime juice
- 3 tbsp light brown sugar
- 2 tbsp fish sauce
- 2 tbsp vegetable oil
- 1 tbsp grated lime peel
- 1 tsp hot chili paste (samba oelek)
- 1 tsp grated peeled fresh ginger
- For Salad:
- 2 lbs cucumbers
- 1 1/2 tsp salt
- 1 tbsp vegetable oil
- 34 cup lightly salted roasted peanuts
- 1 lb cooked deveined, peeled medium shrimp
- 4 cups thinly sliced napa cabbage
- 1 large red bell pepper, seeded and cut into matchsticks
- 3 green onions, cut into matchsticks
- 1/2 cup fresh cilantro leaves
- 1/2 cup torn basil leaves
- 2 tsp black sesame seeds
CREOLE RICE WITH HAM

- 4 stips bacon, chopped
- 1 medium onion, chopped
- 10 mushrooms, sliced
- 2 stalks celery, sliced
- 1 clove garlic
- 1 can 28 oz tomatoes
- 3 tbsp fresh parsley chopped
- Salt and freshly ground pepper
- Pinch oregano, chill powder and cayenne
- 1/2 cup grated Cheddar cheese
- 1 cup cubed cooked ham
- 1/2 cup each of brown & white rice
- 1 green pepper (reserve 3 rings for garnish,chop remainder)
