CHOCOLATE MOUSSE WITH RUM

Cook sugar over very low heat until dissolved but not brown in color
- 1/4 cup sugar
- 2 to 4 tbsp rum
- 1/4 lb semisweet or sweet chocolate
- 2 to 3 tbsp whipping cream
- 2 stiffly beaten egg whites
- 2 cups whipped cream
SALMON WITH TOMATO & OLIVE SALSA

Salmon: Place salmon, skin side down, on a piece of foil
- Salmon:
- 2 lb salmon fillet
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- Tomato and Olive Salsa:
- 1 1/2 cups diced seeded Roma tomatoes
- 1/3 cup chopped pitted Kalamata olives
- 1/4 cup slivered fresh basil
- 1/4 cup olive oil
- 2 tbsp drained capers
- 2 tbsp chopped green onion
- 2 cloves garlic, finely chopped
- 1/4 tsp freshly ground pepper
TILAPIA WITH LEMON CAPER SAUCE

In a glass measuring cup, combine wine, chicken broth, lemon zest, lemon juice, fines herbes, capers and garlic
- 1/3 cup dry white wine
- 1/3 cup chicken broth
- 1 tsp grated lemon zest
- 1 tbsp freshly squeezed lemon juice
- 1 tsp dried fines herbes or oregano
- 1 tbsp small capers, rinsed
- 1 clove garlic, minced
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 1/4 lbs tilapia fillets
- 1 tbsp olive oil (approx.)
- 1 tbsp butter (approx.)
CRAB SALAD MELTS ON RYE BREAD

In bowl, stir together crab-meat, celery, green onion, mayonnaise, ketchup, mustard, pepper and paprika
- 10 oz crab-meat
- 1 rib celery, diced
- 1 green onion, thinly sliced
- 3 tbsp mayonnaise
- 1 tsp ketchup
- 1/2 tsp Dijon mustard
- 1/4 tsp pepper
- 1/2 tsp celery seed
- Pinch paprika
- 4 slices deli-style light rye bread, toasted
- 1/2 cup shredded Gruyere cheese
KEY LIME PIE

Preheat oven to 350F. Beat 4 egg yolks
- 4 egg yolks
- 1 can sweetened condensed milk
- 1/2 cup lime juice
- 1 egg white
- 6 tbsp sugar
- 1/2 tsp cream of tartar
- 1/2 pint whipping cream, whipped
BORSCHT (Mom)

Simmer beef in chicken broth for 1 hour to tenderize
- 1 lb beef sirloin, cut into 1" cubes, browned in oil
- Green & yellow beans
- Carrots
- Onion
- Pearl barley
- Beet tops
- Dill
- Peas
- Salt & pepper
- Chicken broth
TORTILLA CHIP SALAD

Mix lettuce, avocado, tomatoes and onions together
- 1 head lettuce, chopped
- 1 small avocado, cubed
- 2 small tomatoes,chopped
- 1 lb ground beef, cooked
- 1 can kidney beans, drained
- 2 green onions, finely chopped
- 1 cup grated Cheddar cheese
- Crumbled corn chips
- 1 package taco seasoning
- 1/2 cup 1000 Island Salad Dressing
JALAPENO CORN MUFFINS

Preheat over to 375 degree
- 8 tablespoons (1 stick) unsalted butter, plus more for tin, melted
- 3/4 cup nonfat buttermilk
- 2 large eggs
- 1/2 cup sour cream
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 cup packed light-brown sugar
- 2 tablespoons baking powder
- 1 teaspoon coarse salt
- 2 jalapenos, seeded and finely chopped
- 1/4 cup plus 2 tablespoons fresh or frozen (thawed) corn kernels
- Unsalted butter, for serving
SPICY SESAME GRILLED VEGETABLES

To prepare marinade, combine all ingredients except vegetables in a heavy zip-lock plastic bag
- 1/4 cup (60 mL) rice vinegar
- 1/4 cup (60 mL) soy sauce
- 1 tbsp (15 mL) sesame oil
- 1 tbsp (15 mL) olive oil
- 1 tbsp (15 mL) grated fresh ginger
- 1 clove garlic, finely chopped
- 1 tsp (5 mL) hot pepper sauce
- 8 cups (2 L) assorted vegetable pieces (bellpeppers, mushrooms, onions and zucchini)
CORN BREAD

Blend together. Put in 9 x 12 pan (greased)
- 1 can cream corn
- 2 cups grated cheddar (reserve 1/2 cup)
- 1 cup cornmeal
- 1/2 cup sour cream
- 1/4 cup green chilies
- 2 eggs
- 2 tsp baking powder
- 1/4 tsp salt
