CRANBERRY, PISTACHIO & GOAT CHEESE PALMIERS

Roll the puff pastry sheet into a rectangle that is at least 8 inches wide and no less than 1/8-inch thick
- 1 sheet (8 oz) purchased puff pastry sheet, thawed
- 2 oz goat cheese (chevre), room temperature
- 1/3 cup (slightly packed) dried cranberries
- 1/4 cup pistachios, roughly chopped
SINGAPORE CHICKEN

Trim and remove extra fat from chicken
- Sauce:
- 3 lb boneless, skinless chicken breasts
- Flour, salt and pepper
- 1/2 cup brown sugar
- 1/4 cup bottled chili sauce
- 1/3 cup vinegar
- 1/4 cup water
- 1/4 cup ketchup
- 1 small clove garlic, minced
- 1 tsp salt
- 1 tsp Tabasco
UPSIDE DOWN RHUBARB CAKE (MOM)

Put rhubarb into greased 8" x 8" pan and sprinkle with brown sugar
- Rhubarb, cut into small pieces
- Brown sugar
- 1 egg
- 1/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp vanilla

CARROT & COCONUT CREAM SOUP

Combine the onion and butter in a large, heavy pot
- 1 onion, minced
- 1 tbsp butter
- 1 clove garlic, minced
- 1 tbsp fresh grated ginger
- 1/2 tsp anise seed, cracked
- 1/3 tsp finely grated orange zest
- 1/4 tsp cracked fennel seed
- 1/2 tsp sweet smoked paprika
- 6 large carrots, peeled and thinly sliced
- 4 cups chicken or vegetable stock
- 1 tbsp fish sauce
- 1 cup coconut milk
- Kosher salt to taste
- 2 tbsp minced fresh cilantro
- 1/2 lime, juice only

- 1 whole beef tenderloin (about 5 lb/2.2 kg), trimmed
- 1/3 cup balsamic vinegar
- 1/3 cup olive oil, plus 2 tbsp, divided
- 2 cloves crushed garlic
- 3 tbsp reduced-sodium soy sauce
- 1/4 tsp dried crushed rosemary leaves
- 1 cup reduced-sodium beef broth
- 1/3 cup balsamic vinegar
- 2 tbsp butter
SMOKY CORN CHOWDER WITH BACON

Heat a large pot over medium
- 6 slices bacon, chopped
- 1 leek (white part only), finely chopped
- 1 russet potato, finely chopped
- 2 cups frozen corn kernels
- 1 1/2 cups chicken broth
- 1 1/2 cups milk
- 398 - ml can creamed corn
- 1 sprig of thyme or 1/2 tsp dried thyme
- 1 bay leaf
SPRING GREEN VEGETABLES (Brenda Glazer)

Heat olive oil in a large deep skillet and add leeks
- 2 tbsp extra virgin olive oil
- 1 leek, white and light green part, well cleaned, sliced
- 6 oz sugar snap peas, trimmed
- 6 oz snow peas, trimmed
- 1/4 cup chicken or vegetable stock
- 2 cups frozen green peas
- 3 cups packed baby spinach (about 5 oz)
- 3 green onions, thinly sliced
- 1 tbsp chopped fresh mint
- 2 tbsp butter
- Kosher salt and freshly ground black pepper, to taste
LASAGNA

Spray pan with Pam. Layer a bit of meat sauce, then noodles, meat sauce, white sauce, then cheese
- 1 lb hamburger
- 1 onion, chopped fine
- 1 clove garlic, minced
- 1/2 cup celery, chopped fine
- 1 carrot, chopped fine
- 1 can tomato sauce
- 1 can tomato paste
- 1 tsp oregano
- 2 tsp basil
- 1/2 tsp dill
- 1/2 cup red wine
- 1 lb Mozarella cheese
- 1 lb Cheddar cheese
- 1 package lasagna noodles, cooked, drained and & rinsed in cold water
- Bechamel Sauce: Milk, butter, flour, s&p.
BEEF WITH RED WINE & CARROTS

Carve the roast into 1 1/2 to 2" cubes and arrange them on a paper-towel lined tray to dry
- 1 , 3 lb boneless beef sirloin roast
- 2 tbsp extra-virgin olive oil
- 2 slices thick-cut bacon, cut into 1/2" pieces
- Kosher salt and freshly ground black peper
- 8 oz shallots (8-10 medium), thinly sliced (about 2 cups)
- 2 tbsp brandy, such as Cognac
- 2 tbsp tomato paste
- 2-3 cloves garlic, minced
- 2 tsp herbes de Provence
- 2 cups hearty red wine, such as Cote du Rhone
- 1 , 14.5 oz can whole, peeled tomatoes
- 4 strips orange zest (2 1/2" long, removed with a vegetable peeler
- 1 lb slender carrots, peeled and cut into 3/4 to 1" chunks (about 2 cups)
- 1/4 cup coarsely chopped fresh flat-leaf parsley
WARM SESAME-CRUSTED GOAT CHEESE

Preheat oven to 350F. Mix the oils in a bowl large enough to hold the cheese
- 130 grams creamy goat cheese
- 2 tbsp olive oil
- 1/2 tsp hot Asian chili oil
- 2 tbsp bread crumbs
- 2 tbsp sesame seeds
- 2 tsp brown sugar
- 2 tsp caraway seeds
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
