CHOCOLATE CRUNCH PIE

Melt the margarine and chocolate chips in a heavy saucepan over low heat
- 1/3 cup margarine
- 1 cup (6-ounces) semisweet chocolate chips
- 2-1/2 cups crisp rice cereal
- 1 pint ice cream
- Ice cream topping
MAPLE SOY GLAZED SALMON

Whisk together first 5 ingredients in a bowl until combined well
- 1/3 cup pure maple syrup
- 3 tablespoons fresh lime juice
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon finely chopped garlic
- 4 salmon fillets, l 1/4-inch thick (6 to 7 oz. each)
- 3 bunches green onions, trimmed to 7 inches in length
MEXICAN QUINOA SALAD

Mix salad ingredients in a glass or plastic bowl with a lid
- Salad:
- 2 cups cooked quinoa
- 1/3 cup chopped cilantro
- 1/4 cup green onions, diced
- 1 cup chopped black olives
- 1 cup black beans
- 1 cup fresh corn
- 1 cup fresh tomatoes, seasoned with balsamic vinegar and olive oil (add these last minute as they are so moist)
- 2 avocados, diced
- Chili powder and cumin powder, to taste
- Dressing:
- 1/3 cup olive oil
- 1/4 cup honey
- 1/4 cup lime juice and zest
- 2 tablespoons Dijon mustard
- 1 clove garlic, minced

- 1/2 cup sour cream
- 3 oz cream cheese, softened and cubed
- 1 small red onion, halved
- 2 tbsp drained capers
- 2 tbsp freshly squeeze lemon juice
- 1/2 tsp salt
- 4 oz smoked salmon
- 1/4 cup fresh dill
- 1/2 tsp fresh ground pepper
POTATO CASSEROLE

Preheat oven to 375F. Layer potatoes, onion, salt and pepper in a buttered casserole dish
- 3 medium potatoes, thinly sliced
- 1/2 onion, thinly sliced
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup whipping cream
- 1 cum grated Cheddar
- 1 tsp thyme
BERRY-TOPPED CHOCOLATE TORTE

Grease a 9" spring-form pan and line with parchment paper
- 2/3 cup ground almonds
- 3 tbsp flour
- Pinch of salt
- 3/4 cup butter
- 1/3 cup cocoa powder
- 1/2 cup sugar
- 3 eggs, separated
- 1/2 cup sugar
- 3 tbsp Grand Marnier liqueur
- 1 cup whipping cream
- 1 tbsp Grand Marnier liqueur
- 2 cups raspberries
- Chocolate shavings (Bernard Callebaut)
ULTIMATE CHOCOLATE CHIP COOKIES

In large bowl, beat together butter, brown sugar and granulated sugar
- 1 cup butter, softened
- 1 1/4 cups packed brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 2 tsp vanilla
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 3 cups good-quality semisweet chocolate chips or chunks
FROZEN AMARETTO CREAM BASKETS WITH BERRIES

Line baking pan with foil
- 1 8-ounce package cream cheese, room temperature
- 3/4 cup sugar
- 1/4 cup amaretto (or Grand Marnier)
- 1 cup chilled whipping cream
- 1 cup diced hulled fresh strawberries
- 1 cup fresh blueberries
- 1 cup fresh raspberries
SWISS ALMOND SPREAD

- 250 g light cream cheese, softened
- 1/3 cup mayonnaise
- 2 tbsp chopped green onion
- 1 1/2 cups grated Swiss cheese
- 1/3 cup sliced almonds, toasted
GREEK BEST OVEN-ROASTED POTATOES

- Spice mix:
- 1 tsp seasoned salt
- 1 tsp black pepper
- 1 tsp hot paprika
- 1 tsp rosemary or dried oregano
- Potatoes:
- 4 large baking potatoes, peeled, washed, cut into wedges
- Oil for baking dish
- 2 large garlic cloves, chopped
- 4 tbsp butter, melted
- 1 lemon or lime, juice of
- 1 1/4 cup vegetable or chicken broth
- 1 cup grated Parmesan cheese
- 1 cup parsley leaves, stems removed
