- 1 *1 pound beef for stew*
- 1 *1 can (15 ounces) pinto beans, rinsed and drained*
- 1 *1 can (15 ounces) black beans, rinsed and drained*
- 1 *1 can (14 1/2 ounces) diced tomatoes with roasted garlic, undrained*
- 1 *1 can (14 ounces) beef broth*
- 1 1/2 *1 1/2 cups water*
- 1 *1 small green bell pepper, thinly sliced*
- 1 *1 small red bell pepper, thinly sliced*
- 1 *1 small onion, thinly sliced*
- 2 *2 teaspoons ground cumin*
- 1 *1 teaspoon seasoned salt*
- 1 *1 teaspoon black pepper*
- Toppings: sour cream, shredded Monterey Jack or Cheddar cheese, chopped olives (optional)
