Old Bay Sauce for Fish

This recipe is a sauce for any fish
- 1/4 c. mayonnaise
- 2 T. Dijonnaise
- 1 T. Worcestershire sauce
- 2 t. Old Bay seasoning
- 2 trout fillets (or any fillet)

- 4 skinless, boneless chicken breasts, 1/2″ thick (OK if frozen)

Pork Rub recipe may be kept in a cool place in an airtight container
- For each Rack of Ribs Combine:
- Pork Rub (combine)
- 1 c. brown sugar
- 1/2 c. turbinado sugar (sugar in the raw)
- 1/4 c. + 2T. paprika
- 3 T. Kosher salt (ice cream salt)
- 2 T. cumin
- 3 T. granulated garlic
- 3 T. onion powder
- 1 t. black pepper
- 2 T. Aleppo pepper
- 1 t. chili powder
- 1 1/2 t. allspice
- 1 T Pork Rub (above)
- 1/2 stick butter
- 1/2 C cane syrup... dark corn syrup...or honey
- 1/4 C apple cider...or orange juice or both
- 1 T molasses
- Optional (all ingredients):
- 2 T apple cider vinegar, 2T mustard and 1/4C ketchup to make it more KC Style Glaze.
Bowties with Smoked Almond Sauce, Bacon, Lettuce and Tomatoes

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 1 pound bowtie pasta
- 1/3 About 1/3 cup extra virgin olive oil (EVOO)
- 12 slices good-quality smoky bacon, cut into 1/2-inch pieces
- 1 bunch flat leaf parsley, trimmed (about 2 cups, loosely packed)
- A couple of generous handfuls of grated Parmigiano-Reggiano cheese
- 3-4 tablespoons smoked almonds (a generous handful)
- 1 clove garlic, grated
- 1 pint cherry tomatoes or multi-colored baby heirloom tomatoes
- 1/2 small red onion, finely chopped
- 1 head bibb or butter lettuce, leaves separated and torn
