Chicken & Sausage Jambalaya

This recipe came from my New Orleanian mother-in-law, Helen
- 4-6 pieces chicken
- 1 large onion
- 1 T. dried parsley
- 1/2 t. garlic powder
- 1 T. Kitchen Bouquet
- 1/2 pound smoked sausage
- 3/4 c. long grained rice
- salt & pepper
Sweet Potato Hash or Freezer Fry-Up with Sunny Side-Up Eggs

- 2 tablespoons salted butter
- 1 small yellow onion, diced
- 1 red bell pepper, stemmed, seeded, and diced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Kosher salt and freshly ground black pepper
- 1 medium sweet potato, peeled and cut into 1/2-inch cubes (about 8 ounces)
- 1 cup frozen corn
- 1 cup diced frozen pineapple, roughly chopped while frozen
- 3 cups cooked shredded pork, chicken or beef
- 1 tablespoon olive oil
- 4 large eggs
- 2 tablespoons chopped fresh chives, for garnish, optional
Oyster Dressing

- 8 oz. fresh oysters, drained, chopped, and reserve liquid
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 2 c. herbed stuffing
- 2 c. cornbread stuffing
- 3/4 c. chicken broth
- 1/2 c. nuts (optional)
- 1/2 t. salt
- 1/4 t. pepper
- 1-1 1/2 T. poultry seasoning
Mexican Quiche

Spray 8X11" pan with Pam & line with tortillas
- 6 corn tortillas
- 12-16 oz. ground turkey
- 1/2 c. each onion & green pepper
- 2 tsp. Mexican seasonings: cilantro, cumin, chili powder, onion powder
- 1/2 tsp. each salt & thyme
- 5 eggs
- 1 c. skim milk
- 1/2 c. green chilies, drained
- 2 garlic cloves (1 tsp.)
- 16 oz. pinto beans, drained
- 4 oz. grated cheese

- 6 boneless (skinless chicken thighs that are pounded thin)
- 1 pound mushrooms (cremini or white - sliced thinly)

- 2 tablespoons EVOO - Extra-Virgin Olive Oil
- 3 to 4 small ribs celery, chopped
- 2 large carrots, peeled and chopped
- 1 onion, chopped
- 4 cloves garlic, chopped or grated
- 1 Fresno or Holland chile pepper, seeded and finely chopped
- Salt and freshly ground black pepper
- 2 tablespoons fresh thyme
- 1 12-ounce bottle lager beer or 1 1/2 cups chicken stock
- 2 tablespoons brown sugar
- 1 14-ounce can tomato sauce
- 1/4 to 1/3 cup hot sauce, depending on desired heat level (medium to spicy)
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cider vinegar

- each pot 2 1/2-3 quarts of water, 3 crabs in each pot
- 1 garlic head (halved)
- 2 T. vinegar
- 5 T. salt (only 1 time)
- 1 T. dry mustard
- 1 lemon (halved & stabbed)
- 3 T. cayenne pepper
- 2 bags Zatarain's crab boil seasoning
- 3 T. Zatarain's liquid crab boil seasoning
- 6 live blue crab
Baked Beans

Mix all ingredients together & bake 325˚ for 1 hour, or 4 hours on HI in crock pot
- 1 large (1 lb. 15 oz.) can Cambell's or Van Kamp's pork & beans
- 1/8 c. onion flakes or 1/4 fresh onion, grated
- 1/6 c. Bacos or 1/4 lb. ham chunks
- 1/4 c. ketchup
- 1/4-1/3 c. brown sugar
- 1 t. yellow mustard
- 1 t. Worcestershire sauce
- 1/2 T. Kitchen Bouquet
- 1 1b. sliced wieners (opt.)
Cranberry Bean Pasta Fagioli

Heat 3 tablespoons olive oil in a large pot over medium heat
- 5 tablespoons extra-virgin olive oil, plus more for drizzling
- 5 cloves garlic, smashed
- 1 small onion, roughly chopped
- 1/4 teaspoon red pepper flakes, or more to taste
- 1 teaspoon finely chopped fresh rosemary
- 1 2-ounce piece pancetta (optional)
- 5 canned whole San Marzano tomatoes, crushed by hand
- Kosher salt
- 3 pounds fresh cranberry beans in pods, shelled (or 1 cup dried cranberry beans, soaked overnight)
- 2 bay leaves
- 1 piece parmesan cheese rind, plus 1/2 cup grated parmesan, and more for topping
- 2 cups small pasta, such as shells or ditalini
- 1 bunch kale, stems and ribs discarded, leaves chopped
- 1/4 cup roughly chopped fresh parsley

Chicken Piccata

Heat the olive oil on the stovetop in a large skillet over medium heat
- 1/4 cup olive oil
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan
- 1 pound thinly sliced or pounded boneless skinless chicken breasts
- 6 tablespoons butter
- 1 clove garlic, minced
- 1 cup chicken broth
- One 3 1/2-ounce jar capers, rinsed and drained
- 1 1/2 tablespoons white wine vinegar
- 1 tablespoon or more fresh lemon juice
- 2 tablespoons chopped fresh parsley
