Hot Buttered Rum Chicken

CONTESTANT/COMPETITION RECIPE: This recipe was created by a contestant during a cooking competition
- 4 skin-on, bone-in chicken thighs
- 1 1/4 cups rum
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons chopped fresh thyme
- 2 tablespoons seafood seasoning, such as Old Bay
- 1 tablespoon cayenne pepper
- Kosher salt
- 1 1/2 cups brown sugar
- 1/2 cup chipotles in adobo sauce (I will use 1 T. chipotles)
- 1 stick (8 tablespoons) unsalted butter
- Oil, for oiling grill grates

- Shrimp Marinade:
- Zest from 1 lemon
- 2 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1 pound raw shrimp, shelled and de-veined
- Cauliflower Mash:
- 1 head of cauliflower, cut into large-ish florets
- 6-8 cloves garlic, peeled
- extra-virgin olive oil
- Kosher salt and freshly ground black pepper, to taste
- butter (grass-fed)
- 1/2 cup Parmesan cheese, freshly grated
- (optional) half and half or cream / or broth, if needed to correct consistency
- Lemon Garlic Shrimp:
- Marinated shrimp (from above)
- 6 cloves garlic, minced
- 2 slices bacon
- 2 tablespoons butter (grass-fed)
- 1/2 cup white wine, or bottled clam juice
- 1/2 sweet onion, thinly sliced
- 1 teaspoon crushed red pepper flakes, or to taste
- pinch or two of dried oregano
- juice of one lemon
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons fresh oregano, chopped

- One 12-ounce can evaporated milk
- 1 1/2 cups whole milk
- 1/4 cup (1/2 stick ) of butter, melted
- 1 teaspoon salt
- Dash of pepper
- 2 large eggs, beaten
- Two 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)
- Dash of paprika

- 1 pound meaty bacon, divided
- 3 cups chicken stock or water
- 1 cup whole milk
- 1 teaspoon salt plus more to taste
- 1 cup hominy or white grits
- A drizzle olive or vegetable oil
- 1 1/2 pounds shrimp, tails left on and deveined
- Pepper
- 1 teaspoon cumin
- 1 tablespoon thyme, chopped
- 1 rib celery with leafy tops, finely chopped
- 1 bunch scallions, finely chopped
- 2 large cloves garlic, finely chopped
- 1/2 cup beer (I use Abita)
- 4 fried eggs
Rose's Baked Artichoke Hearts

- 1 1/2 cups fresh breadcrumbs
- 1/4 cup finely chopped fresh curly leaf parsley
- 2 ounces Parmesan cheese, grated (1/4 cup)
- 2 ounces Pecorino Romano, grated (1/4 cup)
- 1 tablespoon mixed dried herbs, such as thyme, oregano, and savory, or Italian seasoning blend
- 1 teaspoon coarse salt
- Freshly ground pepper
- 3 packages (9 ounces each) frozen artichoke hearts, thawed and drained
- 2/3 cup extra-virgin olive oil, plus more for baking dishes
- 1/4 cup fresh lemon juice (from 2 lemons)
- 1 teaspoon finely grated lemon zest
- 2 garlic cloves, minced (2 teaspoons)
Mandarin Orange & Almond Salad

- 1/2 cup hoisin sauce
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/2 teaspoon red pepper flakes
- 2 (1/2-inch-thick) pork chops
- 1/4 cup honey
- Vegetable oil
- 1/2 cup cider vinegar
- 2 tablespoons honey
- 3 tablespoons soy sauce
- 1/2 cup vegetable oil
- 1/4 cup sesame oil
- 1 tablespoon crushed red pepper
- 2 tablespoons ground cumin
- 1/4 cup chopped cilantro leaves
- 1/4 cup sliced scallions
- 1 jalapeno, seeded and finely diced
- Salt and pepper
- 1 cup julienne carrot (about 1 large carrot)
- 5 cups thinly sliced red and green cabbage
- 1 cup julienne red pepper (about 1 pepper)
- 2 cups diced pineapple (about 1 small pineapple)
- 3/4 cup toasted, chopped macadamia nuts
