Heat oven to 425. Combine corn meal, flour, sugar, baking powder, and salt
- 1 cup yellow corn meal
- 1 cup flour
- 2 T sugar
- 4 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 egg
- 1/4 cup vegetable oil

Directions In a large bowl, combine the first six ingredients
- GLAZE:
- 2 cups all-purpose flour (can sub 1/2 cup oats for part)
- Optional: 2 T flaxseed, toasted and ground
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon grated lemon peel
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (8 ounces) lemon yogurt (could use plain)
- 1 egg
- 1/4 cup butter, melted
- 1 cup fresh or frozen blueberries
- 1/2 cup confectioners' sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon grated lemon peel
Bacon and Leek Risotto

1. Bring stock and 2 cups water to a simmer in a medium saucepan (do not boil)
- 5 cups unsalted chicken stock (such as Swanson)
- 2 cups water
- 4 bacon slices
- 1 tablespoon olive oil
- 4 cups thinly sliced leek (about 4 large)
- 1/2 cup sliced shallots
- 1 1/2 tablespoons chopped fresh thyme
- 2 garlic cloves, minced
- 2 cups uncooked Arborio rice
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons unsalted butter
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon kosher salt
- 2 ounces Parmigiano-Reggiano cheese, grated (about 1/2 cup)
- 2 tablespoons chopped fresh flat-leaf parsley

Preheat oven to 425 degrees
- 1 3/4 cp all –purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 tablespoons light brown sugar (plus more for tops)
- 1/8 teaspoon cinnamon
- 6 tablespoons unsalted butter, cold and cut into tiny cubes
- 1 cup pureed sweet potatoes, cold
- 1/3 cup plus 2 tablespoons buttermilk, cold
- 2 tablespoons butter, melted (for tops)
- Honey butter for serving, if desired
