Pumpkin Swirled Yeast Bread

I call this my "hostess gift" pumpkin bread, but it's fantastic for any occasion at all
- FILLING:
- 4-1/2 to 5 cups all-purpose flour
- 3 cups whole wheat flour
- 2 cups quick-cooking oats
- 2/3 cup packed brown sugar
- 2-1/2 teaspoons pumpkin pie spice
- 1-1/2 teaspoons salt
- 1 teaspoon sugar
- 2 packages (1/4 ounce each) active dry yeast
- 1-1/2 cups warm water (120° to 130°)
- 1 cup canned pumpkin
- 1/3 cup unsweetened applesauce
- 1/3 cup canola oil
- 2 eggs, lightly beaten
- 1/2 cup toasted pecans
- 1/4 cup butter, softened
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon

White Chocolate Mocha

In a small saucepan, heat milk over medium heat until bubbles form around sides of pan (do not boil)
- 1-1/2 cups 2% milk
- 3 ounces white baking chocolate, chopped
- 2-3 tablespoons instant coffee granules
- 1 teaspoon vanilla extract
- Optional toppings: whipped cream and baking cocoa
Italian Cheese Bread/Focaccia

- TOPPING version 1:
- 2-1/2 to 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 teaspoons active dry yeast
- 1 cup warm water (110° to 115°)

- 1 tablespoon olive oil
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon minced fresh rosemary
- 2 garlic cloves, minced

- 3 to 4 medium plum tomatoes, thinly sliced
Salted Caramel Macaroons

Heat oven to 325°F. Line 2 large cookie sheets with cooking parchment paper; spray with no-stick cooking spray

- 3 T lemon juice
- 1 tsp dried basil
- 1 tsp dried thyme
- 1/8 tsp pepper

Broiled Bananas A La Mode

In a small saucepan, heat preserves over medium heat until warmed
- 2 jars (12 ounces each) apricot preserves
- 1 cup orange juice
- 1/2 teaspoon rum extract
- 12 medium firm bananas, peeled
- 1 cup flaked coconut
- 1 quart peach, vanilla or strawberry ice cream
SPINACH TOMATO TORTELLINI

In a large pot of boiling salted water, cook pasta according to package instructions; drain well
- 12 ounces tortellini pasta
- 1 1/2 cups heavy cream
- 2 tablespoons all-purpose flour
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 (14.5-ounce) can petite diced tomatoes
- 3 cups spinach, roughly chopped
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes, optional
- Kosher salt and freshly ground black pepper, to taste
