- 1/2 cup rolled oats (or 1/4 cup steel-cut oats)
- 1 1/2 cups milk of choice or water
- 1/4 tsp salt
- 1 tbsp cocoa powder, dutch cocoa, or hot cocoa mix
- 1/4 tsp pure vanilla extract
- sweetener of choice
- optional: canned coconut milk for the top
- optional: chocolate chips
Walnut-Pear Salad with Cranberry Vinaigrette

In a small bowl, whisk together all dressing ingredients except oil
- Dressing:
- 1/4 cup thawed frozen cranberry juice concentrate
- 3 T red wine vinegar
- 2 tsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 5 T walnut oil
- Salad:
- 12 cups mixed salad greens
- 1/3 cup coarsely chopped walnuts, toasted
- 1/4 cup dried cranberries
- 1 red pear, unpeeled, sliced
