In a bowl, dissolve gelatin in boiling water
- 1 package (3 ounces) lemon gelatin
- 1 cup boiling water
- 1 can (8 ounces) crushed pineapple
- 1/3 cup orange juice concentrate
- 1 can (11 ounces) mandarin oranges, drained
Grilled Raspberry Chicken

- 1/2 cup raspberry vinegar
- 1/2 cup red wine
- 1/4 cup Worcestershire sauce
- 4 cloves minced garlic
- 1 tsp black pepper
- 2 lbs boneless skinless chicken breast

- springs of watercress or parsley for garnish
- fresh raspberries for garnish
Pumpkin Streusel Coffee Cake with Maple Glaze

Preheat the oven to 350 degrees
- Cake
- a 15 ounce can pumpkin (not the mix or pie filling)
- 1/3 cup apple juice
- 2 large eggs
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla extract
- 2 teaspoons pumpkin pie spice
- 1 box yellow cake mix
- Streusel
- 6 tablespoons butter, melted
- 3/4 cup brown sugar
- 3/4 cup all-purpose flour
- 1 teaspoon cinnamon
- 3/4 cup chopped pecans
- Glaze
- 1/2 cup brown sugar
- 1/4 cup heavy cream
- 1/4 cup pure maple syrup
Caramel Cream Fondue

In a large saucepan over medium heat, stir the sugar and water until the sugar dissolves
- 1 1/2 cups sugar
- 1/4 cup water
- 1 1/2 cups heavy cream, warmed
- 6 oz white chocolate, chopped
- Apples, pears, grapes, dried apricots, marshmallows, pretzels, angel food cake for dipping
Bacon Jam

Bacon jam bruschetta. Bacon jam focaccia
- 1 pound smoked bacon, pre-sliced
- 1 large onion
- 1 jalapeno pepper or to taste (optional)
- 2 large cloves garlic
- 1/4 cup dark brown sugar, firmly packed
- 3/4 cup brewed coffee
- 1/4 cup apple cider vinegar
- 1/4 cup balsamic vinegar
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 1/4 cup water
- Black pepper, freshly ground, to taste
- 1/2 teaspoon red chili pepper flakes or to taste (optional)
Strawberry Colada

Combine all in blender and blend until smooth
- 6 oz. can pineapple juice
- 1/4 c. non-alcoholic pina colada mix
- 2 cups fat-free vanilla frozen yogurt
- 1 cup strawberries (fresh or frozen)
Potato "skin" appetizer

Preheat oven to 400. Mix hash browns and egg in bowl
- 1 package (24 oz) shredded hash browns
- 1 egg, slightly beaten
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup sour cream
- 1/3 cup bacon pieces
- salt and pepper to taste
Macadamia Nut Pie

1. Heat oven to 350°F. Line 9-inch pie pan with dough; crimp edges
- Dough for 1 (9-inch) single-crust pie
- 3/4 cup light corn syrup
- 1/2 cup coconut milk
- 1/2 cup sugar
- 3 eggs
- 3 tablespoons butter, melted
- 2 tablespoons macadamia or hazelnut liqueur, if desired
- 1 1/2 cups macadamia nuts, coarsely chopped
Chocolate Mousse

- 1 envelope unflavored gelatin
- 2 T cold water
- 1/4 cup boiling water
- 1 cup sugar
- 1/2 cup Hershey's cocoa
- 2 cups cold whipping cream
- 2 tsp vanilla
Dark Chocolate Granola Bars

Combine the 1st 7 ingredients
- 1/4 cup sugar
- 1/4 cup maple syrup
- 1/4 cup honey
- 2 T reduced fat peanut butter
- 1 egg white
- 1 T fat-free evaporated milk
- 1 tsp vanilla
- 1 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 2 cups old-fashioned oats
- 1 1/2 cups Rice Krispies
- 1/3 cup dark chocolate chips
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
