Basic Batter Waffles

This hearty waffle recipe comes from an issue of Parent's Magazine
- 2 eggs
- 1 2/3 cups milk (I particularly like canned evaporated milk for some of it)
- 1/3 cup vegetable oil
- 2 cups all-purpose flour (you can substitute wheat germ for 1/4 cup of white flour)
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon maple extract (optional)

- Meat mix: 1 lb ground beef (80 percent lean/20 percent fat), 1 lb ground pork, 1 lb ground veal
- 1 lb pancetta or thick-sliced smoky bacon, finely minced
- 2 whole eggs
- 1/3 cup finely grated Parmigiano-Reggiano
- 1/2 cup finely diced yellow onion
- 8 garlic cloves, minced
- Herb mix: 1/4 cup finely chopped flat-leaf parsley, 2 tbsp chopped oregano, 2 tbsp chopped rosemary
- 1/3 cup fine, dry unseasoned bread crumbs
- 4 about 4 oz (1/2 cup) whole milk
- 1 about 1 tsp coarse salt
- 1 1/2 about 1 1/2 tsp ground black pepper
- canola oil for browning
- 12 about 12 cups good-quality tomato sauce, kept warm over low heat
- finely grated Parmigiano-Reggiano, for serving
Coconut Cream Pie

On a lightly floured surface, roll pastry dough to a 1/8-in
- Pastry for single-crust pie (9 inches)
- 4 large egg yolks
- 2 cups coconut milk
- 1-1/2 cups half-and-half cream
- 1 cup sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1-1/2 cups flaked coconut, toasted, divided
- 2 cups heavy whipping cream
- 1/4 cup confectioners' sugar
- 1/2 teaspoon vanilla extract
Coconut Chicken and Shrimp

In a shallow bowl, whisk together first five ingredients
- MAUI MUSTARD:
- 1 cup all-purpose flour
- 1 cup lime-flavored seltzer water
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1 teaspoon pepper
- 2-1/2 cups sweetened shredded coconut
- 1-1/4 cups panko (Japanese) bread crumbs
- 1 pound uncooked shrimp (31-40 per pound), peeled and deveined
- 2 boneless skinless chicken breasts (6 ounces each), cut into 3/4-inch cubes
- Oil for deep-fat frying
- Salt and pepper to taste, optional
- 1 can (8 ounces) crushed pineapple, well drained
- 1/2 cup red pepper jelly
- 3 tablespoons stone-ground mustard
Spicy Ham Steak

I'm not a big ham fan but I just LOVE this dish
- 1 slice ham steak
- 1/2 cup orange juice (apricot or pineapple work well, too, so does Tang!)
- 1/2 cup ginger ale (or Sprite, 7-Up or a cola drink)
- 1/2 cup packed brown sugar (I usually use light)
- 1 teaspoon dry mustard
- 1 teaspoon red wine vinegar
- 1 tablespoon oil
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
Chicken Alfredo Baked Ziti

Begin by cooking up a batch of pasta
- Cooked pasta
- alfredo sauce
- cooked chicken
- Mozzarella cheese
- sprinkling of parsley
Shredded Beef Enchiladas

There is no need to brown the roast prior to putting it into the crock pot
- 2-1/2 lb. chuck roast
- 1 cup beef broth (I use a beef boullion cube dissolved in hot water)
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon dried oregano
- 1 small can diced green chiles
- 2 tablespoons lime juice
- Enchilada red sauce (can use canned)
Coffee Shop Fudge Recipe

Line an 8-in. square pan with foil and butter the foil; set aside
- 1 cup chopped pecans
- 3 cups (18 ounces) HERSHEY’®S Semi-Sweet Chocolate Chips
- 1 can (14 ounces) sweetened condensed milk
- 2 tablespoons strong brewed coffee, room temperature
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
Berry Chocolate Frozen Yogurt

In blender combine half the yogurt, 1/2 cup berries, half corn syrup, and 1/2 sugar
- 2 16-oz cartons vanilla low-fat yogurt
- 2 1/2 cups fresh raspberries
- 1/2 cup light corn syrup
- 1/4 cup sugar
- 1/2 cup coarsely chopped semisweet chocolate (3 oz)
Almond Chocolate Cake

Gluten free; good topped with ice cream
- 6 * 6 eggs, separated
- 2-1/2 * 2-1/2 cups blanched almonds, toasted
- 2 * 2 tablespoons plus 1-1/4 cups sugar, divided
- 1/2 * 1/2 cup butter, softened
- 3 * 3 ounces semisweet chocolate, grated
- 1/4 * 1/4 cup cold brewed espresso
- 2 * 2 tablespoons HERSHEY®’S Cocoa
- 2 * 2 tablespoons orange juice
- 1 * 1 tablespoon instant espresso granules
- 1 * 1 teaspoon vanilla extract
