Onion-Bacon-And Spinach Frittata

Cook bacon in 10' nonstick skillet over med
- 2 turkey bacon slices, chopped
- 1/8 t. pepper
- 1/8 t. nutmeg
- 6 large egg whites, lightly beaten
- 1 large egg yolk, lightly beaten
- 1 1/2 C. thinly sliced sweet onion, separated into rings
- 2 T. water
- 1/4 t. sugar
- 4 c. torn spinach
- 1/4 C. shredded part skim mozzarella cheese
Walnut Cranberry Orzo

Cook orzo according to package directions
- 1-1/4 cups uncooked orzo pasta
- 1 medium sweet red pepper, chopped
- 1 small onion, chopped
- 1-1/2 teaspoons olive oil
- 1/2 cup reduced-sodium chicken broth or vegetable broth
- 1/2 cup dried cranberries
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts, toasted
- 1/4 cup grated Parmesan cheese
Frito Bars

In a greased 10x15 pan, place corn chips
- 10 1/2 ounces Frito corn chips (Frito Lay)
- 1 cup white sugar
- 1 cup light corn syrup(Karo)
- 1 cup creamy peanut butter ( Skippy)
- 1 cup Milk chocolate chips (Hershey or Nestle)
Sweet Potato,Buttternut Squash and Pear Casserole

Boil butternut and sweet potatoes (if not canned) uncovered for 20 minutes on simmer until tender
- 6 ½ cups peeled, cubed sweet potatoes (2 lbs.) or canned yams (1 large can)
- 4 ½ cups peeled, cubed butternut squash (1½ lbs)
- 3 tbs. margarine
- 2 ⅔ cup peeled chopped pears (1 lb) or you can use 1 large can of pears
- ⅓ cup evaporated skim milk
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla
- 2 eggs
- 3/4 cup low-fat granola without raisins
- 1/4 cup brown sugar

Stir together bisquick, sugar
- Topping:
- 1 1/2 cup. Bisquick
- 1/4 cup. sugar
- 1/2 cup. milk
- 1 egg
- 2 Tbs. oil
- 1/3 cup. Bisquick
- 1/3 cup. brown sugar
- 2 Tbs. butter, cold
- 1 tsp. cinnamon
- 1/4 cup. nuts, chopped (optional)
Chicken Pot pie

Preheat oven to 375*. Cook vegs
- 2 Pkg. birds eye steamfresh mix vegs.
- 1 can cream chicken soup
- 1 can cream potato soup
- 1/2 cup milk
- 1 tsp. pepper
- 1 tsp. dill
- 1 1/2 cup cooked diced, chicken
- 1 pkg. pie crust
Homemade Carmel Corn

Pop bags of popcorn and pour into two 12X16" greased baking sheets
- 2 bags microwave popped popcorn
- 1 1/2 C. peanuts
- 1 C. pecans, almonds or whatever you like
- 1 C. butter
- 2 C. brown sugar
- 1/2 C. corn syrup
- 1 t. salt
- 1/2 t. soda
- 1 t. vanilla
Rice-Stuffed Acorn Squash

Cut squash in half; remove seeds
- 2 large acorn squash
- 3/4 cup uncooked long grain rice
- 1-1/2 cups water
- 2 tablespoons soy sauce
- 1 medium onion, chopped
- 1/4 cup butter, cubed
- 2 medium tart apples, peeled and chopped
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1/2 cup chopped walnuts
- 1/2 cup half-and-half cream
- 1/4 cup balsamic vinegar
- 3 tablespoons honey
- 3 teaspoons minced fresh gingerroot
- 1 teaspoon curry powder
- Note: can substitute chicken for apple for entree

Place water in a saucepan; bring to a boil
- 1-1/3 cups water
- 1 cup uncooked couscous
- 1 can (11 ounces) mandarin oranges, drained
- 1 cup frozen peas, thawed
- 1/2 cup slivered almonds, toasted
- 1/3 cup chopped red onion
- 3 tablespoons cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon hot pepper sauce

- 1 can (14-1/2 ounces) diced tomatoes and green chilies
- 1 can (4 ounces) chopped green chilies, undrained
- 2 cups frozen corn, thawed
- 3 cups water
- 1 large onion, chopped
- 2 medium carrots, sliced
- 2 garlic cloves, minced
- 2 teaspoons chili powder
