No-Fuss Potato Soup

Saute onion and celery to release flavor
- 8 cups cubed peeled potatoes
- 5 cups water
- 2 cups chopped onion
- 1/2 cup chopped celery
- 1/2 cup thinly sliced carrots
- 1/4 cup butter, cubed
- 4 teaspoons chicken bouillon granules or 2 vegetable bouillon cubes
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 can (12 ounces) evaporated milk
- 3 tablespoons minced fresh parsley
- Minced chives, optional
Dessert Pancake with Apple Topping

Combine flour and 1 cup milk in large bowl; stir well with wire whisk
- Apple Topping:
- 1 c. flour
- 2 c. 1% low-fat milk, divided
- 2 T. sugar
- 1 t. vanilla
- 1/4 t. almond extract
- 3 eggs, lightly beaten
- dash of salt
- 1 t. butter or margarine
- 1 T. sifted powdered sugar
- 2 t. butter or margarine
- 3 medium Granny Smith apples, peeled, thinly sliced

In a large nonstick skillet, combine the brown sugar, cider vinegar, garlic powder and mustard; bring to a boil
- 1/2 cup packed brown sugar
- 1/4 cup cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon ground mustard
- 2 large onions, sliced and separated into rings
- 1 can (28 ounces) baked beans
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (15-1/4 ounces) lima beans, rinsed and drained
- 4 bacon strips, cooked and crumbled
Lemon Glazed Zucchini Quick Bread

1. Preheat oven to 350 degrees
- 2 1/3 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup zucchini -- finely shredded
- 1/2 cup 1% low-fat milk
- 1/4 cup vegetable oil
- 2 tablespoons grated lemon rind
- 1 large egg

- 1 cup sifted powdered sugar
- 2 tablespoons fresh lemon juice

- 2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
- 1/2 cup water
- 1/3 cup minced fresh basil
- 1/4 teaspoon pepper
- 2-1/2 cups frozen cheese tortellini
- 1 can (19 ounces) white kidney beans or cannellini beans, rinsed and drained
- 2 tablespoons balsamic vinegar
- 1/4 cup shredded Parmesan cheese
Chinese-Style Green Beans

- 3 cups cold fat-free milk
- 2 packages (1 ounce each) sugar-free instant white chocolate pudding mix
- 1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes
- 3 cups sliced fresh strawberries
- 3 cups fresh raspberries
- 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
- 3 whole strawberries, quartered
Molasses Raisin Bread
