Heat oil in a large nonstick skillet over medium-high heat
- 1 tablespoon canola oil
- 1/2 cup chopped green onions (about 4)
- 1 garlic clove, minced
- 1 cup chopped red bell pepper (about 1)
- 1 finely chopped seeded jalapeño pepper
- 1 cup fresh corn kernels (about 2 ears)
- 1 (15-ounce) can black beans, rinsed and drained
- 1/3 cup minced fresh cilantro (may omit)
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Worcestershired Salmon Loaf

Preheat oven to 350*. Combine all salmon loaf ingds
- 15 1/2 oz salmon, drained and flaked
- 2 C. soft bread crumbs, I used crackers
- 1/4 c. finely chopped onions
- 1 T. dry parsley, if desired
- 4 eggs, slightly beaten
- 1 T. worcestershire sauce
- 1 T. lemon juice
- 3/4 t. salt
- 2 T. oleo
- Quick Tangy Cream Sauce
- 1/2 c. mayoonnaise
- 1/3 c. milk
- 2 t. lemon juice
- 1 t. mustard
- 1 t. worcestershire sauce
- 1/8 t. salt
Hot Tuna Salad

1 Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray
- 1 (10 3/4-oz.) can condensed
- 98 % fat-free cream of celery soup
- 1 (8-oz.) can crushed pineapple in unsweetened juice, undrained
- 1 (8-oz.) can sliced water chestnuts, drained
- 1 (4-oz.) jar sliced pimientos, drained
- 1 1/2 cups uncooked instant white or brown rice
- 1 1/2 cups sliced celery
- 2/3 cup raisins
- 1 tablespoon salt-free lemon-pepper seasoning
- 1 1/2 cups water
- 1 (12-oz.) can water-packed chunk light tuna, drained, flaked
- 1 cup fat-free mayonnaise or salad dressing
- 1/2 cup sliced almonds

- FILLING:
- 4-1/2 cups biscuit/baking mix
- 1-1/3 cups milk
- 2 tablespoons butter, softened

- 1 1/4 cups cubed peeled acorn or butternut squash (about 1 medium)
- 3/4 cup diced zucchini
- 1/2 cup chopped carrot
- 1/2 cup diced fennel
- 1 cup water
- 1 (14-ounce) can fat-free, less-sodium chicken broth
- 5 tablespoons no-salt-added tomato paste
- 1/4 cup uncooked ditalini (very short tube-shaped pasta)
