- 1/3 c. very hot water
- 1 can (8 oz) pizza sauce
- 1 package (3 1/2 oz)sliced pepperoni
- 1/2 c. sliced fresh mushrooms
- 1/2 c. chopped bell pepper
- 1 1/2 c. shredded mozzarella cheese (6 oz)
Winter Veggie Stir-Fry

In wok, stir fry carrots, parsnips and onion in hot oil for 2 mins
- 1 C. sliced carrots
- 1 C. sliced parsnips
- 1/2 c. sliced onion, separated into rings
- 1 T. olive oil
- 1 C. julienned potatoes
- 1 C. julienned sweet potatoes
- 3/4 t. ground ginger
- 1/2 C. vegetable broth
- 2 t. orange juice concentrate
- 1/2 t. salt
- 1/8 t. crushed red pepper flakes

- 1 (8 oz) mint chocolate cream pie fat-free yogurt (such as Dannon Light)
- 1/2 c. Cool Whip, thawed
- 1 (3 7/8 oz) pkg. double fudge fat-free pudding mix
- 1/2 c. reduced-fat cream-filled chocolate sandwich cookie crumbs (about 5 cookies)
- 4 creme de menthe chocolaty mint thins
Confetti Cauliflower

- 1 medium cauliflower, break into florets
- 1 T olive oil
- 2 cloves garlic, minced
- 2 T green onions, chopped
- 1/2 cup sweet red peppers, chopped
- 1/2 cup sweet green peppers, chopped
- 1/2 cup yellow sweet peppers, chopped
- 1/4 c chopped fresh dillweed
- 1 t lemon pepper
- 2 t white wine vinegar

- 1 1/2 teaspoons olive oil
- 3/4 cup chopped onion
- 1 garlic clove, minced
- 1 1/2 cups salsa
- 1 cup tomato juice
- 1 teaspoon sugar
- 2 (14.5-ounce) cans no-salt-added whole tomatoes, undrained and chopped
- 1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium tomato soup, undiluted
- 1/2 (10-ounce) package frozen chopped spinach

- 1 cans (15 ounces each) black beans, rinsed and drained

- 1 envelopes taco seasoning
- 1 packages (13 ounces each) spicy nacho tortilla chips
- 2 cups (16 ounces) shredded cheddar cheese
