- 1/2 c. (1 stick) butter
- 2 oz unsweetened chocolate
- 1 oz semisweet chocolate
- 2 eggs
- 1 c. sugar
- 1 1/2 T. unsweetened cocoa
- 1 t. vanilla
- 1/2 c. flour
- 14 thin mint candies (Andes Mints)
Almond Rhubarb Coffee Cake

In a large bowl, combine the flour, brown sugar, baking soda and salt
- 2-1/2 cups all-purpose flour
- 1-1/2 cups packed brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 egg
- 1 egg white
- 3/4 cup buttermilk
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1-1/2 cups sliced fresh or frozen rhubarb
- 1/2 cup sliced almonds, toasted, divided
- 1/3 cup sugar
- 2 teaspoons butter, melted
Apple Pancakes

Combine first 7 ingredients in a large bowl; stir well
- 1 cup whole-wheat flour
- 1 cup all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- Dash of ground nutmeg
- 2 cups low-fat buttermilk
- 1 tablespoon honey
- 1 tablespoon molasses
- 1 tablespoon margarine, melted
- 2 teaspoons lemon juice

Preheat oven to 300°. Beat egg whites, cream of tartar, and salt at high speed of a mixer until soft peaks form
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 cup sugar
- 3 tablespoons unsweetened cocoa
- 3 tablespoons semisweet chocolate minichips
Carrot Cupcakes

Cream butter; gradually add sugar beating well at medium speed of mixer
- Orange Glaze:
- 1/4 c. plus 2 T. butter or margarine, softened
- 3/4 c. sugar
- 2 eggs
- 1 c. flour
- 1/2 c. whole wheat flour
- 1 1/4 t. B.P.
- 3/4 t. baking soda
- 1 t. cinnamon
- 1 t. grated orange rind
- 1/4 t. salt
- 1/4 t. nutmeg
- 1 1/2 c. coarsely shredded carrot
- 1/4 c. skim milk
- 1 t. vanilla
- 3/4 c. sifted powdered sugar
- 1 T. plus 1 t. unsweetened orange juice
- 1/4 t. grated orange rind

- 3 C. reserved Three Bean Casserole
- 2 C. water
- 1 (14.5 oz) can diced tomatoes
- 2 t. finely chopped fresh garlic
- 1/2 t. sugar
- Salt and pepper to taste

- 1 bone-in turkey breast (6 pounds), skin removed
- 1 medium onion, chopped
- 1 small green pepper, chopped
- 1/4 cup chili sauce
- 3 tablespoons white vinegar
- 2 tablespoons dried oregano or Italian seasoning
- 4 teaspoons beef bouillon granules
- 12 kaiser or hard rolls, split
