In a large nonstick skillet, saute the green peppers, mushrooms and onion in water and oil until onion is tender
- 2 medium green peppers, chopped
- 1-1/2 cups sliced fresh mushrooms
- 1 medium onion, chopped
- 1/2 cup water
- 1 teaspoon canola oil
- 2 garlic cloves, minced
- 1 can (28 ounces) diced tomatoes, undrained
- 1 can (16 ounces) kidney beans, rinsed and drained
- 3/4 cup uncooked long grain rice
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1 cup (4 ounces) shredded part-skim mozzarella cheese, divided

- 2 medium zucchini, coarsely grated (about 1-1/2 cups)
- 1 large potatoes, peeled and finely shredded (about 1-1/4 cups)
- 1 small onion, grated
- 2 tablespoons cornmeal
- 2 tablespoons all-purpose flour
- 3/4 teaspoon salt
- 1 egg, lightly beaten
- Oil for deep-fat frying

Cream of Broccoli Soup

Cook broccoli in water in medium saucepan until tender; about 5 minutes
- 2 C. chopped broccoli
- 1 (10 oz) pkg frozen chopped broccoli
- 2 C. water
- 1/2 C chopped onion
- 1/2 C. butter
- 1/4 C. flour
- 1/4 C. corn starch
- 2 chicken bouillon cubes
- 6 C. milk
- 1 t. pepper
Maple-Rum Banana Sundae
