CHOCOLATE WHIPPED CREAM

In a small saucepan combine whipping cream and semisweet chocolate
- 1/2 cup whipping cream
- 1/2 ounce (1/2 square) semisweet chocolate
CITRUS CHICKEN WITH ROASTED POTATOES

Place chicken skin side down, in two 13" x 9" x 2" baking dish
- Potatoes:
- 1 whole chicken or parts
- 1/4 cup orange juice concentrate
- 1/4 cup fresh lemon juice
- 3 tablespoons chili sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons honey or sugar
- 2 tablespoons fresh thyme or 1-1/2 teaspoons dried thyme
- 1 lb. red potatoes unpeeled, cut into large cubes
- 1-1/2 lbs. sweet potatoes unpeeled, cut into large cubes
- 3/4 lb. shallots pepped
- 3 tablespoons olive oil
- 1/4 cup fresh thyme springs or 1 tablespoons dried thyme
- 1-1/4 teaspoons kosher salt
- 1-1/4 teaspoons black pepper
- 2 tablespoons cornstarch dissolved in 2 tablespoons cold water
- Fresh thyme sprigs, lemon and orange slices for garnish
DIP QUARTERBACK

Combine all ingredients except chips
- 1 can white shoepeg corn drained
- 1 diced red bell pepper
- Dash of garlic powder
- 1 tablespoon mayonnaise
- Dash of chili powder
- Salt and pepper to taste
- Tortilla chips
BUTTER PECAN SAUCE

Saute pecans in butter in a saucepan until light browned
- 1/2 coarsely chopped pecans
- 2 tablespoons butter or margarine melted
- 1 14 oz. can sweetened condensed milk
- 1-1/2 cups water
- 1 tablespoon rum extract
QUICHES TARRAGON COCKTAIL

Combine first three ingredients in a small bowl, spoon mixture evenly into pastry shells
- Pastry Shells:
- 1 cup (4 ounces) shredded Cheddar cheese
- 2 tablespoons chopped fresh chives
- 2 teaspoons dried tarragon
- Pastry shells
- 3 large eggs, lightly beaten
- 3/4 cup half and half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon ground nutmeg
- Dash of hot sauce
- 1/2 cup butter or margarine, softened
- 1/2 ( 8 ounce) package cream cheese softened
- 1 cup plus 2 tablespoons all purpose flour
- 1-1/2 tablespoons sesame seeds
- 1/4 teaspoon salt
BAKED PIMIENTO CHEESE

Stir together first 5 ingredients in a large bowl, stir in cheese
- 1-1/2 cups mayonnaise
- 1 (4 oz.) jar diced pimiento drained
- 1 teaspoon Worcestershire sauce
- 1 teaspoon finely grated onion
- 1/4 teaspoon ground red pepper
- 1 (8 oz.) block extra-sharp Cheddar cheese shredded
- 1 (8 oz.) block sharp Cheddar cheese shredded
OLD FASHIONED PEACH COBBLER

Preheat oven to 400 degrees
- Crust:
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 cup shortening
- 8 About 8 tablespoons water
- Filling:
- 2 cups sugar
- 3 tablespoons all-purpose flour
- 7 cups sliced fresh peaches
- 1 cup water
- 1/2 teaspoon almond extract
- 1/2 cup (1 stick) butter or margarine, divided
DANISH DOUGH

Sprinkle yeast and pinch sugar into very warm water in a large bowl
- 3 packages dry yeast
- Pinch sugar
- 1 cup very warm water
- 1/3 cup non-fat dry milk powder
- 4-1/2 cups sifted all-purpose flour
- 1 teaspoon salt
- 1/4 cup granulated sugar
- 1 teaspoon vanilla
- 1 teaspoon grated orange rind
- 1/4 teaspoon ground cardamom
- 3 eggs
- 1 cup (2 sticks) unsalted butter
- 3 tablespoons flour
GREEN BEANS WITH CARAMELIZED RED ONIONS

Heat 3 tablespoons oil in heavy large skillet over medium high heat
- 6 tablespoons olive oil
- 1-1/2 lbs. red onions thinly sliced
- 1 lb. green beans, trimmed
- 1-1/2 tablespoons balsamic vinegar
- 3/4 teaspoon dried tarragon
SHORT RIBS PROVENCALE WITH CREME FRAICHE MASHED POTATOES

Preheat oven to 325 degrees
- 2 tablespoons or more olive oil
- 6 pounds meaty beef short ribs
- 1 large onion finely chopped
- 1 medium carrot finely chopped
- 1 celery stalk finely chopped
- 12 whole garlic cloves peeled
- 2 tablespoons all purpose flour
- 1 tablespoon dried herbes de Provence (dried thyme, basil, savory and fennel seeds)
- 2 cups red zinfandel
- 1-1/2 cups canned beef broth
- 1 (14-1/2 oz.) can diced tomatoes in juice
- 1 (14-1/2 oz.) can diced tomatoes in juice
- 1 bay leaf
- 1/2 cup (about water)
- 24 baby carrots peeled
- 1/2 cup Nicois olives pitted
- 3 tablespoons chopped fresh parsley
