PORK PAILLARDS WITH SOUR CREAM PAPRIKA SAUCE

Season pork paillards on both sides with salt and pepper
- 16 pork paillards
- Salt and pepper
- 2 tablespoons oil
- 1/4 cup dry white wine
- 1/2 cup chicken stock
- 1/2 cup sour cream
- 1/4 teaspoon sweet paprika
CHOCOLATE COVERED CHERRY COOKIES

In large bowl stir together flour, cocoa powder, salt, baking powder and soda
- 1-1/2 cups all purpose flour
- 1/2 unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup butter or margarine, softened
- 1 cup sugar
- 1 egg
- 1-1/2 teaspoons vanilla
- 1 - 10 oz. jar maraschino cherries
- 1 - 6 oz. package semisweet chocolate pieces
- 1/2 cup sweetened condensed milk
CRAB BALLS

In heavy, deep pot, preheat peanut oil to 365 degrees
- Tartar Sauce:
- 2 slices bread crust removed and processed into crumbs 1/3 cup heavy cream
- 1 tablesppon mayonnaise
- 1 tablespoon Worcestershire sauce
- 1 tablespoon finely chopped parsely leaves
- 1 teaspoon house seasoning
- 1 teaspoon seasoning salt
- 1 egg beaten
- 1 pound lump crab meat
- 1 cup mayonnaise
- 1 whilte onion chopped
- 1/2 cup dill pickle chips chopped
- Fresh lemon juice
- Pinch house seasoning
- Freshly ground black pepper
KILLER BAKED BEANS

In skillet, brown bacon, drain on paper towels and put in large baking dish
- 1/2 lb. bacon cut into 1” pieces
- 1 lb. ground beef
- 1 large onion
- 1/2 cup brown sugar
- 1/4 cup catsup
- 1/4 cup barbecue sauce
- 2 teaspoons dry mustard
- 1/2 cup molasses, or less to taste
- 1/2 teaspoon chili powder
- 1 teaspoon pepper
- 1 can butter beans drained
- 1 can kidney beans drained
POTATO AND SWEET POTATO TARTAN

Preheat oven to 350 degrees
- 1 lb. potatoes, thinly sliced
- 12 ounces sweet potatoes, thinly sliced
- 1 green apple, cored and grated
- 3 leeks, white and pale green parts only, halved lengthwise, sliced 1/8" thick and rinsed well
- 1 tablespoon olive oil
- Coarse salt
- Freshly ground black pepper
- 2 ounces Gruyere cheese (1 cup)
SPOON BREAD SWEET BUTTERMILK

Butter and sugar six ramekins
- 1 cup water
- 2/3 cup buttermilk
- 1/3 cup heavy whipping cream
- 2 tablespoons plus 2 teaspoons sugar
- 1/2 teaspoon honey
- 1/4 teaspoon coarse kosher salt
- 2/3 cup white cornmeal
- 2 large eggs, separated
- Pinch of cream of tartar
- Strawberry preserves
BREAD CARAMELIZED ONION AND PEPPERED FLATBREAD

Heat oven to 400 degrees. Line 15 x 10" pan with sides with aluminum foil
- 1/4 cup firmly packed brown sugar
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper
- 8 slices thick bacon
- 4 cups thinly sliced sweet onion
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 can refrigerated thin pizza crust
- 1 can (14.5 ounce) diced tomatoes, drained
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup thinly sliced fresh basil leaves
GRATIN OF POTATO WITH WHITE CHEDDAR AND TARRAGON

- 3 lbs. Yukon Gold potatoes, peeled, cut into 1/8 inch thick rounds
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2-1/2 teaspoons dried tarragon
- 1-1/2 cups (packed) grated sharp white cheddar cheese (about 6 ounces)
- 1 cup whipping cream
- 1 cup dry white wine

- 3 large eggs beaten
- 1 (8 oz.) package cream cheese, softened
- 1 (8 oz.) carton sour cream
- 1/2 cup butter melted
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- 8 oz. package noodles cooked with out salt or fat
- 4 pecan pralines (or substitute) 1/4 cup firmly packed brown sugar and 2 tablespoons chopped pecans
