CHOCOLATE CHUBBIES

Combine first 3 ingredients in a heavy saucepan; cook, stirring often, over low heat until chocolate melts
- 6 (1 oz.) semisweet chocolate squares chopped
- 1 (1 oz.) unsweetened chocolate squares, chopped
- 1/3 cup butter
- 3 large eggs
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 cups (12 ounces) semisweet chocolate morsels
- 2 cups coarsely chopped pecans
- 2 cups coarsely chopped walnuts
CORN DOGS

Preheat oil in deep fryer to 375 degrees
- 2 cups flour
- 3/4 cup corn meal
- 1/2 cup sugar
- 1-3/4 teaspoon salt
- 1 teaspoon baking soda
- 1-3/4 cups fat free milk
- 2 egg yolks slightly beaten
- 10 hot dogs
- 5 pairs chopsticks
BACON WRAPPED SHRIMP

Please shrimp and balsamic dressing into a large resealable plastic bag, refrigerate for 15 minutes
- Balsamic Vinaigrette:
- 24 medium shrimp shelled and deveined
- 1/3 cup prepared balsamic vinaigrette
- 24 wood toothpicks
- 12 slices of bacon
- 24 pickled jalapeno slices
- 1/2 cup mayonnaise
- 1 tablespoons chili sauce
- 1 tablespoon pickle relish
- 1 tablespoon minced sweet red pepper
- 6 tablespoons balsamic vinegar
- 1/2 cup fresh orange juice
- 4 tablespoons fresh lemon juice
- 1/4 cup olive oil
- 1 tablespoon chopped fresh marjoram or oregano or 1/2 tsp. dried
- Fresh ground black pepper
- Pinch of cayenne pepper
- 1/4 teaspoon salt
CARAMEL PECAN TURTLES

Cream crisco and sugars together, add milk, beat in eggs one at a time, add vanilla
- Caramel and Chocolate Topping:
- 1 cup crisco or 1 stick
- 1-1/2 cups sugar
- 1/2 cup brown sugar
- 2 tablespoons milk
- 3 eggs
- 1 teaspoon vanilla
- 4-5 cups flour
- 1-1/2 teaspoons baking soda
- 1-1/2 teaspoons cream of tartar
- 1 teaspoon salt
- 28 caramels
- 2 tablespoons milk
- 3 cups pecan halves
- 1 - 6 oz. bag semi-sweet chocolate chips
CORN CASSEROLE TORTILLA

Mix all ingredients. Bake at 350 degrees uncovered for 30-40 minutes
- Cooking spray or butter to grease dish
- 2 11 oz. cans Mexicorn drained
- 2 4.5 oz. cans green chilies
- 2 cups Monterey Jack cheese
- 2/3 cup Parmesan cheese
- 1 cup Mayonnaise
CHICKEN TERIYAKI

Mix teriyaki, honey, garlic, oil in pan
- 3/4 cup teriyaki sauce
- 3 tablespoons honey
- 2 cloves garlic finely chopped
- 3 tablespoons olive oil
- 4 chicken cutlets
- 1 package vermicelli or soba noodles
- 2 green onions sliced
PORK FRIED RICE

Cook rice. Heat 1 tablespoon oil in a wok
- 1-1/2 cups uncooked rice
- 4 tablespoons oil
- 2 eggs, lightly beaten
- 1 clove garlic, bruised
- 1 slice fresh finger, roughly chopped
- 6 green onions, cut in 1/2" pieces
- 1/2 lb. Chinese barbecued pork
- 1/4 cup soy sauce
SORBET WATERMELON

Bring 3 cups water and sugar just to a boil in a medium saucepan over high heat, stirring until sugar dissolves
- 3 cups water
- 1 cup sugar
- 4 cups seeded, chopped watermelon
- 1/4 cup lime juice
GARLIC SHRIMP IN TOMATO SAUCE

In large nonstick pan heat oil over moderate heat
- 3 tablespoons olive oil
- 2 lbs. large shrimp shelled
- 4 garlic cloves minced
- 1 large pinch dried red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 medium tomatoes (about 3/4 lbs.) peeled and chopped
- 1 cup canned crushed tomatoes in thick puree
- 1 teaspoon chopped fresh rosemary or 1/4 teaspoon dried rosemary
- 2 tablespoons capers drained
- 1/3 cup pitted black olives halved
