BRUSSEL SPROUTS

In a large skillet melt the butter over medium heat
- 1 tablespoon butter
- 6 whole garlic cloves
- 4 to 6 slices bacon
- 3/4 pound (about 12) Brussels sprouts, cut in 1/2
- 1 teaspoon sugar
- 1/2 cup chicken broth
- Salt and freshly ground black pepper
SQUASH & ONION GALETTE

Galette: Preheat oven to 450 degrees
- Pate Brisee:
- 2 tablespoons unsalted butter
- 1 tablespoon honey
- 1-1/4 lbs. squash cut into 1/2" thick rounds
- Coarse salt
- Freshly ground pepper
- 3 tablespoons extra virgin olive oil
- 1 onion thinly sliced (2 cups)
- 1 large disk Pate Brisee dough
- All purpose flour for surface
- 1 lb. fresh Ricotta cheese
- 2 large eggs plus 1 large egg lightly beaten for egg wash
- 10 fresh sage leaves
- 2-1/2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 8 ounces (2 sticks) cold unsalted butter cut into small pieces
- 1/4 to 1/2 cup ice water
SHANGHAI SPRING ROLLS WITH SWEET CHILI SAUCE

Peel shrimp and finely chop
- SWEET CHILI SAUCE:
- 1/2 lb. unpeeled fresh shrimp
- 2 large eggs lightly beaten
- 1/2 lb. ground pork
- 1 (8 oz.) can water chestnuts drained and minced
- 1 (8 oz.) can bamboo shoots drained and minced
- 3 garlic cloves minced
- 2 green onions diced
- 2 tablespoons minced fresh ginger
- 1 tablespoon soy sauce
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 (12 oz.) package spring roll wrappers
- vegetable oil
- sweet chili sauce
- 1 (7 oz.) bottle of hot chili sauce with garlic
- 1/2 cup water
- 1/3 cup rice wine vinegar
- 1/4 cup sugar
- 1/4 lemon juice
- 2 tablespoons chili paste
PIZELLE ICE CREAM SANDWICHES

To make the pizzelles: Preheat the pizzelle iron to medium-high heat
- Ice Cream Sandwiches:
- 1/3 cup sugar
- 2 large egg whites
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 4 tablespoons butter, melted
- 1/3 cup all-purpose flour
- 3/4 cup chocolate-hazelnut spread (such as Nutella)
- 1 pint good-quality ice cream or gelato, such as espresso, vanilla, chocolate
- Powdered sugar, for dusting
HONEY BARS

Mix first 3 ingredients well
- Glaze:
- 3/4 cup oil
- 1/4 cup honey
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1-1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 beaten egg
- 1/2 cup nuts
- 1 cup powdered sugar
- 1 tablespoon water
- 1 tablespoon mayonnaise
- 1 teaspoon vanilla
CREAMY ONION CANAPES

Preheat oven to 400 degrees
- 2 onions, cut into rings
- 2 tablespoons oil
- 1 package white sandwich bread
- 1 (8-ounce) package of cream cheese
- 1 teaspoon Worcestershire sauce
- Seasoned salt
- Black and red pepper
- Paprika
- Mayonnaise
PEPPER STEAK

With sharp knife cut beef across grain into thin strips 1/8" thick
- 1 lb. beef chuck or round, fat trimmed
- 1/4 cup soy sauce
- 1 clove garlic
- 1-1/2 teaspoons fresh ginger grated
- 1/4 cup salad oil
- 1 cup green onions, thinly sliced
- 1 cup red or green peppers cut into 1" squares
- 2 stalks celery, thinly sliced
- 1 tablespoon cornstarch
- 1 cup water
- 2 tomatoes, cut into wedges
SHRIMP SWEET CAJUN

Combine all ingredients except shrimp in a sauce pan
- 1 cup catsup
- 1 tablespoon honey
- 1 tablespoon brown sugar
- 2 tablespoons vinegar
- 2 teaspoons hot sauce
- 1 teaspoon cayenne pepper
- 1/2 teaspoon thyme
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 lb. shrimp, peeled and deveined

- Brown Butter Icing:
- 1/2 cup ( 1 stick) butter softened
- 1/2 cup vegetable shortening
- 1-1/2 cups packed light brown sugar
- 2 eggs
- 1/2 cup buttermilk
- 1-3/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon freshly ground nutmeg
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 2-1/2 cups quick-cooking oatmeal
- 1 cup raisins
- 1-1/2 cups chopped walnuts
- 1 teaspoon vanilla extract
- brown butter icing
- 1/2 cup butter
- 3 cups sifted powdered sugar
- 1 teaspoon vanilla extract
- 3-4 tablespoons water
SWEET & SAVORY BURGERS

- 1/4 cup soy sauce
- 2 tablespoons corn syrup
- 1 tablespoon lemon juice
- 1/2 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 2 green onions thinly sliced
- 2 lbs. ground beef
- 1/4 cup chili sauce
- 1/4 cup jalapeno jelly
- 8 hamburger buns
