- 1 cup fine cornmeal
- 1 cup flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Dash salt
- 1 egg lightly beaten
- 1 cup buttermilk
- 1/2 cup frozen corn thawed
- 1 cup grated orange cheddar cheese
- 2 pickled jalapenos minced

PEACH TARTE TATIN

Blend first 5 ingredients in processor
- CRUST:
- 1-2/3 cups all purpose flour,
- 2 tablespoons sugar
- 1 teaspoon grated orange peel
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 9 tablespoons chilled unsalted butter cut into small pieces 3 tablespoons ice water
- 1-1/2 teaspoons apple cider vinegar
- FILLING:
- 3/4 cup sugar
- 3 tablespoons water
- 1/4 cup (1/2 stick) unsalted butter cut into small pieces room temperature
- 3 lbs. peaches peeled
- 1 peach halved remaindered quartered
- Whipped cream
CHOCOLATE CHEERY ICE CREAM PIE WITH HOT FUDGE SAUCE

- 1 cup whipping cream
- 1 oz. bittersweet chocolate finely chopped
- CRUST AND FILLING:
- 30 chocolate wafer cookies (about 7 ounces) broken into pieces
- 5 tablespoons unsalted butter, cut into 1/2” cubes
- 3/4 lb. fresh bing cherries pitted, coarsely chopped
- 1/4 cup sugar
- 1 tablespoon brandy (optional)
- 1/8 teaspoon almond extract
- 1 quart vanilla ice cream slightly softened
- 1/2 cup miniature semisweet chocolate chips
CREAMY CORN AND CHESTNUT PUDDING

Melt butter in saucepan over medium heat
- 6 tablespoons (3/4 stick) butter
- 1/4 cup all purpose flour
- 3 cups half and half
- 5 cups frozen corn kernels, thawed
- 1/4 cup finely chopped shallot
- 1-1/2 teaspoons salt
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground white pepper
- 1 7.41 ounce jar whole steamed or roasted peeled chestnuts (about 1-1/2 cups) cut into 3/4" pieces
- 1/4 cup chopped fresh chives
- 6 large eggs

Cook sausage in a large skillet over medium heat, stirring to crumble drain
- 1/4 lb. bulk pork sausage
- 1/4 lb. cooked ham ground
- 1/4 lb. cooked corned beef ground
- 1/4 cup finely chopped onion
- 1/8 teaspoons parsley flakes
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1 cup milk
- 1 (32 oz.) jar chopped sauerkraut well drained
- 2 eggs beaten
- 2/3 cup water
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 3 cups soft bread crumbs
- vegetable oil
- creamy mustard sauce
CREAM CHEESE STRAWBERRY CHEESE BALL

Mix all ingredients except pecans into a ball
- 4 cups cheddar cheese
- 4 ounces cream cheese
- 1 cup pecans chopped
- 3/4 cup mayonnaise
- 1 medium onion grated
- 1 garlic clove pressed
- 1/2 teaspoon hot sauce
- 1 jar of strawberry jam
GREEK SALAD POTATO SALAD AND DRESSING

Boil potatoes in jackets for about 30 minutes or until tender
- Dressing:
- 6 boiling potatoes
- 2 medium sized white onions
- 1/2 up thinly sliced green onions
- 1/2 small green pepper
- 1/4 cup finely chopped parsley
- 1/2 cup mayonnaise salad dressing
- Salt to taste
- 1/2 cup distilled white vinegar
- 1/4 cup each olive and vegetable oil

- 1/4 teaspoon baking soda
- 5 tablespoons unsalted butter, cut into cubes

- 1 lb. pecans, toasted, coarsely chopped (about 4 cups)
