BLACK FOREST BROWNIE ALA MODE

Grease bottom only of 13" x 9" pan and our in mix
- 21.5 oz. package brownie mix
- 1 cup cherry pie filling
- 1/4 cup oil
- 2 eggs
- 1-1/4 cups semi-sweet chocolate pieces
PARTY PASTRIES

Combine cream cheese and butter, beat at medium speed of mixer until mixture is smooth
- Chicken Salad Filling:
- 1 (3 oz. package cream cheese softened
- 1/2 cup butter or margarine softened
- 1 cup all purpose flour
- Dash of salt
- 3/4 cup finely chopped cooked chicken
- 1/3 cup mayonnaise
- 1/4 cup finely chopped celery
- 2 tablespoons finely chopped green pepper
- 2 tablespoons chopped dill pickles
- 1/8 teaspoon white pepper
- Pizza Tarts:
- 1/4 cup plus 1 tablespoons commercial pizza sauce
- 1/2 cup shredded mozzarella cheese
ONIONS GRILLED

Peel and wash onions. Cut a 1" core from top of each onion and make shallow slits in a circle around the top
- 6 large sweet white onions
- 12 strips bacon
- 2 tablespoons butter
- Salt and pepper
CHICKEN SAUSAGE AND SHRIMP PAELLA

Heat oil in dutch oven over medium heat
- 1 tablespoon olive oil
- 1/2 lb. hot chicken or turkey sausage sliced
- 2 onions chopped
- 6 garlic cloves chopped
- 1 can chicken broth
- 1 bottle clam juice
- 1 can stewed tomatoes
- 1 cup water 1/2 cup dry white wine
- 1/2 teaspoon ground turmeric
- 1 small bay leaf
- 1/2 teaspoon hot pepper sauce
- 3/4 teaspoon salt
- 1-1/2 cups raw long grain white rice
- 1 sweet green pepper cored seeded and diced
- 1 piece baked ham (6 oz.) cut into 3/4” cubes
- 1 whole boneless skinned chicken breast cut into cubes 1/2 lb. raw shrimp peeled and deveined
- 1 box frozen peas
TOMATOES GREEN MARINATED

Cut tomatoes into 1/4” thick slices
- 4 large green tomatoes
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup tarragon vinegar
THREE BEAN SALAD

Mix dressing, pour over vegetables and refrigerate
- 1/2 cup sugar
- 1/2 cup wine vinegar
- 1/2 cup chicken broth
- 1/2 teaspoon dry mustard
- 1/2 teaspoon dry basil
- 1 teaspoon salt
- 1/2 teaspoon parsley
- 1 can green string beans
- 1 can yellow string beans
- 1 can red kidney beans
HALUSKI

Mix all together in a bowl with handle to form a thick paste
- 2 eggs beaten
- 1 cup flour
- pinch of salt
- 1/2 teaspoon baking powder
- enough water to moisten

Beat 3 eggs on high speed for 5 minutes
- Filling:
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 teaspoon lemon juice
- 3/4 cup flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup finely chopped pecans
- Confectioners sugar
- 1 cup confectioners sugar
- 2 3 oz. packages cream cheese
- 4 tablespoons margarine
- 1/2 teaspoon vanilla
COUNTRY FRIED STEAK WITH BISCUITS AND GRAVY

Steak and Gravy: Combine 1 1/2 cups flour and 1/4 teaspoon of pepper in a small bowl
- Steak and Gravy:
- 1 1/2 cups, plus 2 tablespoons all-purpose flour
- 1/2 teaspoon freshly ground black pepper
- 8 (4-ounce) tenderized beef round steak (have butcher run them through cubing machine)
- 1 teaspoon House Seasoning, recipe follows
- 1 teaspoon seasoning salt
- 2 cups buttermilk
- 2/3 cup vegetable oil
- 1 1/2 teaspoons salt
- 1 quart whole milk
- 1/2 teaspoon monosodium glutamate (recommended: Ac'cent), optional
- 1 bunch green onions, or 1 medium yellow onion, sliced
- Basic Biscuits:
- 1 package yeast
- 1/2 cup lukewarm water
- 5 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 3/4 cup solid shortening (recommended: Crisco)
- 2 cups buttermilk
- House Seasoning:
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months
SCALLOPED POTATOES AND SWEET POTATO GRATIN WITH FRESH HERBS

Fill large bowl with cold water
- 1-1/2 lbs. potatoes
- 1-1/2 lbs. sweet potatoes
- 2 cups heavy whipping cream
- 1/4 cup (1/2 stick) butter
- 2 garlic cloves, minced
- 1 tablespoons minced Italian parsley
- 1 tablespoon minced fresh rosemary
- 1 tablespoon minced fresh sage
- 1 tablespoon minced thyme
- 1-1/2 teaspoons fine sea salt
- 3/4 teaspoon ground black pepper
- 1-1/4 cups coarsely grated Gruyere cheese
