SPANISH BEAN SOUP

Wash garbanzos in cold water
- 1 lb. dried garbanzos
- 1.2 lb. smoked bacon
- 1 - 1 -1/2 lb. ham bone
- 1/2 lb. lean beef (flank steak)
- 2 chorizos
- 1 small whole onion
- 1/2 green pepper
- 1 whole ripe tomato
- 1 bay leaf
- Pinch toasted Saffron
- 3 medium potatoes, peeled and cubed
- Salt and pepper
MEXICAN CAVIAR

Combine all ingredients and chill overnight
- 2 (4-1/4 ounce) can chopped ripe olives
- 2 (4 ounce) cans chopped green chilies
- 2 tomatoes peeled and chopped
- 3 chopped green onions
- 2 mashed garlic cloves
- 3 teaspoons olive oil
- 2 teaspoons red wine vinegar
- 1/4 teaspoon pepper
- Dash of seasoning salt
ROASTED CAULIFLOWER WITH RED PEPPER BUTTER

In small bowl stir together butter and bell pepper
- 1/4 cup unsalted butter melted
- 2 tablespoons finely chopped roasted red bell pepper
- 3/4 cup teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 1 head cauliflower cut into florets (about 6 cups)
- 1/4 cup unseasoned dry bread crumbs
PORK & POTATO CASSEROLE

Heat oven to 400 degrees. Sprinkle chops with salt and pepper
- 6 pork chops
- Salt and pepper
- 2 tablespoons butter or margarine
- 2 cups onions sliced
- 3 lbs. potatoes sliced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 can (10-1/2 oz. can) chicken broth
- 1 can (8 oz.) tomato sauce
- 1 teaspoon prepared mustard
BRINING CHICKEN

Dissolve salt and sugar in boiling water
- 3/4 cup kosher salt
- 3/4 cup granulated sugar
- 1 cup boiling water
- 1 gallon cold water
- 1 tablespoon black pepper
BROCCOLI RICE CASSEROLE

Saute onions and celery in melted margarine
- 1 cup cooked rice
- 1 package (10 oz.) frozen chopped broccoli
- 1 (8 oz.) jar Cheez Whiz
- 3/4 cup chopped onion
- 1/4 cup chopped celery
- 1 can cream of mushroom soup
- 1 small can chopped mushrooms
- 1 stick margarine
NUTMEG-EGGNOG CAKE WITH GLAZE

Cake: Heat oven to 350 degrees
- Cake:
- 1-1/4 cups unsalted butter softened
- 1-1/2 cups sugar
- 6 egg yolks
- 1 tablespoon rum
- 1-1/2 teaspoons vanilla
- 3 cups sifted cake flour
- 2-1/2 teaspoons baking powder
- 2 teaspoons ground nutmeg
- 1 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 cup purchased eggnog
- Glaze:
- 1 cup powdered sugar
- 1-2 tablespoons milk
- 1-1/2 teaspoons rum
- 1/2 teaspoon vanilla extract
- 1/4 cup sliced almonds
UNFORGETTABLE CHICKEN CASSEROLE

Stir together first 8 ingredients in large bowl
- 3 cups chopped roasted chicken
- 2 cups finely chopped celery
- 1 cup (4 oz.) grated Cheddar cheese
- 1/2 cup slivered almonds
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 (10-3/4 oz.) cream of chicken soup
- 1 (4 oz.) can water chestnuts drained and chopped
- 1-1/2 cups French fried onion rings
WATERMELON RIND PICKLES

Remove most of the pink fruit from watermelon rind, a little rim of pink makes your pickles prettier
- 1 watermelon (5-1/2 lbs. rind)
- 4 tablespoons salt
- 3 tablespoons powdered alum
- 11 cups sugar
- 2 cups white vinegar
- 1-1/2 tablespoons whole cloves
- 6 blades mace
- 3 sticks cinnamon

- 3 quarts water
- 1 tablespoon salt
- one 2-2-1/2 lb. broiler fryer cut up
- 1 teaspoon salt,
- 1 teaspoon pepper
- 1 cup all-purpose flour
- 2 cups vegetable oil
- 1/4 cup bacon drippings
