PORK RED STEW

Heat bacon drippings in dutch oven
- 2 tablespoons bacon drippings
- 2 lb. boneless pork
- 2 cups chopped onions
- 1 cup chopped green pepper
- 2 cloves garlic minced
- 2 tablespoons chili powder
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon crushed red pepper
- 2 cans (14-1/2 oz.) chicken broth
- 3 cups cubed and peeled potatoes cut into 1" squares
- 2 cups fresh or frozen corn
- 1 can garbanzo beans, drained
HONEY CHICKEN

Step 1: In a large bowl mix all batter ingredients together until smooth
- 1 1/2 lbs boneless skinless chicken breasts (cut into 1” chunks)
- Oil (for deep frying)
- Batter-
- 4 tablespoons cornstarch
- 1/4 cup flour
- 1 teaspoon baking powder
- 1/2 cup water
- 1/2 teaspoon salt
- 1 egg
- 1 egg white
- Sauce-
- 1 1/2 tablespoons oil
- 2 teaspoon ginger (minced)
- 3 tablespoons garlic (minced)
- 1 teaspoon salt
- 3 tablespoons honey
- 1 teaspoon rice wine vinegar
- 1/2 cup water
- 1 teaspoon cornstarch (mixed with 1 teaspoon water)
- Sesame seeds (for garnish)
CHICKEN NOODLE CASSEROLE

Heat butter in large saucepan and gradually blend in flour
- 4 cups cooked chicken
- 1/4 lb. butter
- 8 tablespoons all purpose flour
- 4 cups chicken broth
- 1 cup heavy cream
- 3/4 cups processed yellow cheese in chunks
- 1 lb. ripe olives sliced
- 1 - 4 oz. can mushrooms
- 1 - 3 oz. package slivered toasted almonds
- 3 tablespoons minced onion
- 3 tablespoons green peppers
- 3 tablespoons minced celery
- Salt and pepper to taste
- 8 oz. package cooked noodles
PUMPKIN CREAM PIE WITH CHCOLATE ALMOND BARK AND TOFFEE SAUCE

Crust: Preheat oven to 350 degrees
- Crust:
- 12 whole graham crackers
- 1/4 cup sugar
- 7 tablespoons unsalted butter, melted
- Filling:
- 1 cup canned pumpkin
- 3/4 cup packed golden brown sugar
- 1/4 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- 2 quarts premium vanilla ice cream
- Bark, Sauce and Topping:
- Nonstick vegetable oil spray
- 6 ounces semi-sweet or bittersweet chocolate chopped

- 4 large skinless boneless chicken breast halves
- 1/4 teaspoon each salt and pepper
- 1-1/2 teaspoons olive oil
- 1 lb. mushrooms quartered
- 1 large garlic clove chopped
- 2 medium green bell peppers, cored, seeded and cut into strips
- 1 medium onion thinly sliced
- 1 can ( 28 oz.) crushed tomatoes
- 8 oz. angel hair pasta

- 1 cup all purpose flour plus more for surface
- 1/4 cup unswedtened cocoa powder
- 1/8 teaspoon salt
- 1 stick unsalted butter, room temperature
- 1/4 cup sugar
- 1/2 teaspoon pure vanilla
- 10 ounce bittersweet chocolate, coarsely chopped
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 large egg, lightly beaten
- Meringue Hearts:
- 2 large egg whites, room temperature
- 1/2 cup sugar
- Pinch of cream of tartar
- Gel paste food coloring in assorted colors

- 3 egg yolks beaten
- 3 tablespoons grated orange rind
- 3/4 cups orange juice
- 5 egg whites
- 1/2 teaspoon cream of tartar
- 3 cups sifted powdered sugar
- 1/8 teaspoon salt
- 2-2/1 teaspoons orange rind
- 1/4 teaspoon orange extract
- 3-1/2 -4 tablespoons orange juice
LEMON MERINGUE PIE

- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 1-1/2 cups cold water
- 1/2 cup lemon juice
- 5 eggs, separated
- 2 tablespoons butter or margarine
- 1-3 teaspoons grated lemon rind
- 1 baked 9" pastry shell
- 1/4 teaspoon cream of tartar
- 1/2 cup plus 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
