CREAM CHEESE PIE CRUST

Combine water and vinegar in a small bowl
- 2 teaspoons cold water
- 1 teaspoon cold cider vinegar
- 1-1/2 cups all-purpose flour, plus more for surface
- 1/2 teaspoon salt
- 4 ounces (1 stick) cold unsalted butter, cut into small pieces
- 4 ounces cold cream cheese, cut into small pieces
CHOCOLATE PUDDING

Chop chocolate, reserve in bowl
- 8 oz. bittersweet chocolate
- 1/2 cup sugar
- 6 egg yolks
- 4 cups heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
CHILI MARINATED FLANK STEAK

Whisk first 7 ingredients in medium bowl to blend
- 1-1/4 cups red wine vinegar
- 3/4 cup olive oil
- 1/2 cup New Mexico chili powder
- 1/3 cup garlic powder
- 1/3 cup Hungarian sweet paprika
- 1/4 cup packed brown sugar
- 2 tablespoons salt
- 1 red onion chopped
- 3 bay leaves crumbled
- 2 fresh thyme sprigs
- 2 fresh rosemary sprigs
- 1 - 2 lb. flank steak
- 3 cups mesquite chIps soaked in water 1 hour
SOUTHWESTERN SPICE BLEND

Combine all ingredients. Store in airtight container
- 1 tablespoon salt
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons pepper
- 1/2 teaspoon unsweetened cocoa
BEET SUMMER SALAD

Bring 2 quarts of water in saucepan to boiling
- 2 teaspoons salt
- 1/4 cup fresh lemon
- 8 beets
- 1/4 cup honey
- 2 tablespoons wine vinegar
- 2-3 Kirby cucumbers peeled and scored,
- 1/4 cup chicken broth
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped fresh dill
- 1 tablespoon finely chopped fresh thyme
- 2 tablespoons olive oil
- 6 cups assorted salad greens
- 1/2 cup sour cream

- 2 cups flour
- 2 tablespoons butter or margarine
- 1/2 cup boiling water

CHILI HOT DOG CORNBREAD CASSEROLE

- Southern Cornbread:
- 1 tablespoons extra virgin olive oil
- 2 medium onions chopped
- 1 green bell pepper chopped
- 1/4 cup chopped celery

- chopped tomatoes and onions for garnish
- 1 cup yellow cornmeal preferable stone ground
- 1 cup flour

EASY MASHED POTATOES

- 1 jar (8 oz.) Cheez Whiz
- 3 cups hot mashed potatoes prepared without salt
- 1/2 cup chopped green onions
- 1/2 cup sour cream or warm milk
