FRIED RICE

Use chopsticks or a form to separate the rice grains
- 2 cups cold cooked rice
- 3 eggs, beaten lightly
- 1 tablespoon soy sauce
- 1/4 teaspoon sesame oil
- Salt and pepper
- 3 tablespoons vegetable oil
- 1/4 lb. shrimp meat cut in 1/4" pieces
- 2 slices cooked bacon, drained, cut in 1/4" dice
- 2 green onions, chopped
MARDI GRAS SHRIMP

Preheat oven to 450 degrees
- 1-1/2 lbs. medium shrimp, shell on
- 1/2 cup butter
- 1/4 cup worcestershire sauce
- 2 tablespoons brown sugar
- 4 teaspoons garlic, minced or pressed
- 4 teaspoons paprika
- 4 teaspoons fresh lemon juice
- 2 bay leaves
- 2 teaspoons fresh rosemary minced
- 2 teaspoons fresh ground black pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 3/4 cup beer at room temperature
RED BEANS & RICE WITH SMOKED SAUSAGE

In medium saucepan, heat oil over medium high heat, add onion and chilies and saute 3 minutes
- 3 tablespoons vegetable oil
- 1 medium onion chopped
- 1 can (4 oz.) chopped green chilis
- 3/4 cup uncooked rice
- 1 cup water
- 1 beef bouillon cube
- 1 can red beans
- 1/2 cup shredded Monterey jack cheese
- 1 lb. smoked sausage
CHOCOLATE SURPRISE CUPCAKES

Beat cream cheese in bowl until smooth, using mixer
- 2-3 ounces cream cheese, softened
- 1 egg
- 1/3 cup sugar
- 1/8 teaspoon salt
- 1 6 oz. package chocolate pieces
- 1-1/2 cups sifted flour
- 1 cup sugar
- 1/4 cup cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup water
- 1/3 cup cooking oil
- 1 tablespoon vinegar
- 1 teaspoon vanilla
- 2 tablespoons sugar
- 1/2 cup chopped walnuts
1905 SALAD COLUMBIA

Preparation Combine lettuce, tomato, ham, Swiss cheese, and olives in a large salad bowl
- Salad Ingredients
- 4 cups iceberg lettuce, broken into 1 1/2" × 1 1/2" pieces
- 1 ripe tomato, cut into eighths
- 1/2 cup baked ham, julienned 2" × ⅛" (may substitute turkey or shrimp)
- 1/2 cup Swiss cheese, julienne 2" × ⅛"
- 1/2 cup pimiento-stuffed green Spanish olives
- 2 cups “1905” Dressing (see recipe below)
- 1/2 cup Romano cheese, grated
- 2 tablespoons Lea & Perrins Worcestershire Sauce®
- 1 lemon
- “1905” Dressing
- Ingredients
- 1/2 cup extra-virgin Spanish olive oil
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- ⅛ cup white wine vinegar
- Salt and pepper to taste
JUMBO PEANUT SQUARES

In medium saucepan, combine first 3 ingredients, cook and stir over medium heat until well blended
- 1 (14 oz.) can sweetened condensed milk
- 1 cup smooth peanut butter
- 1 cup butterscotch flavored chips
- 1-1/2 cups coarsely chopped dry roasted peanuts
- 2 cups cornflakes
BLUEBERRY CHEESECAKE

- 3 packages lady fingers
- 2 (8 oz.) cream cheese
- 1 pint whipping cream
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1 can blueberry pie filling
PHILLY CHOCOLATE TUNNEL CAKE

- 1 chocolate cake mix with pudding
- 1/3 cup squeeze Parkay margarine
- 2 - 8 oz. packages cream cheese softened
- 1/2 cup sugar
- 2 eggs
- 2 tablespoons squeeze Parkay margarine
- 2 oz. semi-sweet chocolate
- 2 tablespoons corn syrup
BASIC YEAST BISCUITS

- 1 package yeast
- 1/2 cup lukewarm water
- 5 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 3/4 cup solid shortening
- 2 cups buttermilk
CLASSIC WALNUT PIE

- 1 cup sugar
- 2 tablespoons all-purpose flour
- 1 cup corn syrup
- 2 tablespoons butter melted
- 1 teaspoon vanilla
- 1 9" unbaked pie shell
- 1-1/2 cups walnut pieces
