WILD MUSHROOM FRITTATA

Preheat oven to 400 degrees F
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 12 crimini mushrooms, sliced
- 1 cup shiitake mushrooms, a couple of handfuls, stems removed, chopped
- 1 cup oyster mushrooms, a couple of handfuls, chopped
- 1/2 tablespoons chopped fresh thyme leaves
- Coarse salt and pepper
- 12 eggs, beaten
- Dash of half-and-half
- 1 lemon, zested
- 2 scallions, sliced
- 2 teaspoons hot sauce (recommended: Tabasco)
- 1/2 cup Parmesan
ITALIAN FILLED BREAD

n medium saucepan heat oil
- 2 tablespoons olive oil
- 1 small onion minced
- 1 garlic clove minced
- 1 can (35 oz.) Italian peeled tomatoes with their juice
- 2 tablespoons heavy cream
- 1 lb. Italian sweet sausage casings removed
- 1/4 teaspoon freshly ground pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 teaspoon salt
- 1/2 recipe quick bread dough
- 3/4 cup finely diced mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
- 1 egg beaten
LEMON SOUFFLE

1. Preheat oven to 375 degrees
- 2 tablespoons unsalted butter, plus more, room temperature for dishes
- 1/2 cup granulated sugar, plus more for dishes
- 8 large egg yolks plus 10 egg whites, room temperature
- 2 tablespoons all purpose flour
- 1/4 cup plus 2 tablespoons fresh lemon juice plus 2 tablespoons finely grated lemon zest
- 1 cup whole milk
- Confectioners sugar for garnish
CORN RELISH (BLUE RIBBON)

Remove husks and silks from corn, cut corn from cobs
- 16 to 20 ears of corn
- 2 cups water
- 3 cups chopped celery
- 1-1/2 cups chopped red sweet pepper
- 1-1/2 cups chopped green pepper
- 1 cup chopped onion
- 2-1/2 cups vinegar
- 1-3/4 cups sugar
- 4 teaspoons dry mustard
- 2 teaspoons pickling salt
- 2 teaspoons celery seed
- 1 teaspoon ground turmeric
- 2 tablespoons cornstarch
FUDGE CHOCOLATE BROWNIES

Preheat oven to 350 degrees
- Chocolate Icing:
- 1 teaspoon plus 1 cup vegetable shortening
- 2 cups sugar
- 4 large eggs
- 1/2 cup water
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- 4 oz. semisweet chocolate chopped
- 1 recipe chocolate icing
- 1 lb. confectioners sugar
- 1/2 cup unsweetened cocoa powder
- 1 stick unsalted butter at room temperature
- 1/3 cup boiling water
SALAD ITALIAN CHOPPED

For Dressing: Place vinegar, honey, Italian seasoning, garlic and some salt and pepper in blender
- DRESSING:
- 1/2 cup red win vinegar
- 2 tablespoons honey
- 1 teaspoon dried Italian seasoning
- 2 cloves Garlic smashed and chopped
- Salt and pepper
- 1/2 cup olive oil
- SALAD:
- 1 lb. bacon
- 2 cups Ditalini pasta, cooked al dente and cooled
- 1 cup crumbled gorgonzola
- 2 hearts romaine chopped
- 1/4 small head red cabbage chopped
- 1/4 head iceberg lettuce chopped
- 1-2 large tomatoes chopped
- 1/2 small red onion minced
NACHOS

BEEF AND BEAN TOPPING: Heat a medium nonstick skillet over medium high heat
- PICO DE GALLO SALSA:
- 4 vine ripe tomatoes seeded and chopped
- 1 jalapeno pepper, seeded and finely chopped
- 1 small white onion chopped
- 1/2 cup cilantro leaves finely chopped
- BEEF AND BEAN TOPPING:
- 1 tablespoon olive oil
- 1 pound ground sirloin
- 2 cloves garlic chopped
- 1 small onion chopped
- 1 jalapeno pepper chopped
- 1 teaspoon salt
- 1-1/2 teaspoons dark chili powder
- 1-1/2 teaspoons ground cumin
- 2 teaspoons to 1 tablespoon cayenne pepper sauce
- 1 can black beans drained
- CHEESE SAUCE:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 3/4 pound pepper jack cheese shredded about 2-1/2 cups
STRIPED BUTTER COOKIES

Beat butter and sugar with a mixer on medium-high speed until smooth
- 4 sticks unsalted butter, room temperature
- 2 cups confectioners sugar
- Salt
- 5 cups all-purpose flour (4-3/4 cups for chocolate variation) plus more for surface
- 1/4 cup unsweetened cocoa powder
PINEAPPLE STRAWBERRY SLUSH

Combine pineapple juice, orange juice, and next 4 ingredients in a 4 quart plastic container, cover and freeze
- 1 (46 oz. can) unsweetened pineapple juice
- 1 (6 oz.) can frozen orange juice concentrate, thawed and undiluted
- 2-1/2 cups gin, vodka or rum
- 1-1/2 cups sugar
- 2 tablespoons lemon juice
- 2/3 cup strawberry flavored syrup
- 1 (3 liter) bottle lemon lime carbonated beverage, chilled
