GARLIC CHICKEN

Place chicken in freezer for 1-2 hours
- Sauce:
- 4 boneless skinless chicken breast halves
- 1 egg white
- 1 tablespoon cornstarch
- 1 tablespoon dry white wine or sherry
- 4 green onions
- 1 teaspoon minced ginger
- 3 teaspoons minced garlic
- 2 tablespoons vegetable oil
- hot cooked rice
- 1 teaspoon crushed chili paste
- 2 teaspoons sugar
- 1 teaspoon cornstarch
- 2 teaspoons rice vinegar
- 1 tablespoon water
- 2 tablespoons dry white wine or sherry
- 2 tablespoons soy sauce
CHICKEN ROASTED WITH POTATOES, SHALLOTS AND OLIVES

Preheat oven to 450 degrees
- 2 large shallots blanched in boiling water for 1 minutes peel and halved lengthwise
- 1 garlic cloves minced
- 3 tablespoons olive oil
- 2 tablespoons finely chopped fresh oregano leaves or 1 tablespoon dry crumbled,
- small potatoes scrubbed and halved, if large quartered 1/4 cup cracked green olives pitted
- 1/4 cup Kalamata olives pitted
- 1 whole chicken rinsed and patted dry
- 2 tablespoons fresh lemon juice
- 1 cup chicken broth
- 1/2 cup dry white wine
OHIO PICKLES

Cut cucumbers 1/4” thick
- 4-5 cucumbers
- 1-2 cloves garlic
- 1 small head dill
- 2 teaspoons salt brine
- 1 cup sugar
- 2 cups white vinegar diluted slightly
- 1/2 teaspoon pepper
ROAST NEW YORK STRIP LOIN WITH ADOBO RUB

Chop garlic in processor. Add paprika, vinegar, oil, rosemary, salt, and pepper, grind to thick paste
- 6 large garlic cloves peeled
- 1/4 cup sweet paprika
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1 6 lb. New York strip loin, all but 1/2” fat trimmed
PORK ALBONDIGAS

In large bowl, using hands or a wooden spoon, mix all ingredients until blended
- Meatballs:
- 12 oz. lean ground pork
- 1/2 cup grated unpeeled zucchini
- 1/2 cup crushed unsalted tortilla chips
- 1/4 cup sliced scallions
- 2 tablespoons chopped cilantro or mint
- 1 large egg
- 1-1/2 teaspoons minced garlic
- 1/2 teaspoon each salt, ground cumin and dried oregano 1 can (10 oz.) mild enchilada sauce
HIDDEN VALLEY RANCH BUFFALO WINGS

- 24 chicken wings
- 1 envelope Hidden Valley Ranch dressing mix
- 1/3 cup margarine, melted
- 1/4 cup pepper sauce
- 3 tablespoons vinegar
- 1/2 teaspoon paprika

- Dough:
- 2 envelopes active dry yeast
- 1/4 cup warm milk (105 to 155 degrees)
- 3 tablespoons plus 5 cups all purpose flour
- 1 tablespoons plus 1/4 cup sugar
- 1 cup butter (2 sticks) at room temperature
- 6 egg yolks
- 2/3 cup heavy cream
- 2/3 cup milk
- 1 teaspoon salt
- Walnut Filling:
- 3 eggs
- 1-1/2 cups sugar
- 2/3 cup heavy cream
- 1-1/2 lbs. walnuts finely ground (6 cups)
COUNTRY GRITS AND SAUSAGE CASSEROLE

Brown sausage in a large skillet, stirring until it crumbles
- 2 lbs. mild ground pork sausage
- 4 cups water
- 1-1/4 cups quick cooking grits, uncooked
- 4 cups (1 lb.) shredded sharp Cheddar cheese
- 1 cup milk
- 1/2 teaspoon dried thyme
- 1/8 teaspoon garlic powder
- 4 large eggs, lightly beaten

- 2/3 cup sifted flour
- 2 squares unsweetened chocolate
- 1/3 cup butter or margarine
- 1/2 cup broken walnuts
- 2 eggs
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup sugar
- 1 teaspoon vanilla
SWEET POTATO CAKE WITH ORANGE CREAM CHEESE FROSTING

- 3 medium sweet potatoes
- 3 cups cake flour
- 2 teaspoons baking soda

- 2 teaspoons ground cinnamon

- 1/4 teaspoon ground cloves
- 1 cup vegetable oil
- 1 cup sugar, 1 cup (packed) golden brown sugar
- 4 large eggs
- 2/3 cup plus 1/4 cup chopped walnuts toasted
- 2/3 cup plus 1/4 cup dried cranberries.
- One 8 oz. package cream cheese at room temperature
- 1 stick unsalted butter at room temperature,
- 3-1/4 cups powdered sugar sifted
- 2 tablespoons frozen orange juice concentrate thawed
- 1/2 teaspoon vanilla extract
- 1/4 cup sliced candied orange peel
- 3 tablespoons sugar
