- /2 cup (1 stick) unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all purpose flour
- 1/4 teaspoon ground cinnamon.
- Icing:
- 6 oz. good quality white chocolate chopped
- 3 tablespoons whipping cream
- 3/4 teaspoon peppermint extract
- Glaze:
- 6 tablespoons whipping cream
- 6 oz. bittersweet or semisweet chocolate chopped
- White chocolate curls optional
- Fresh mint optional
- Halved strawberries optional
SALAD DRESSINGS DIFFERENT KINDS

- Classic French Dijon:
- 1/3 cup white wine vinegar
- 1/2 teaspoon each kosher salt and ground black pepper

- 1/2 cup extra virgin olive oil
- Raspberry Balsamic:
- 1/3 cup balsamic vinegar
- 2 tablespoons water
- 4 teaspoon raspberry preserves

- 1/2 teaspoon ground black pepper
- 1 tablespoons chopped shallots

CHICKEN FINGERS SPICY SESAME

Cut chicken fillets into 1" strips
- 1-1/2 lbs. chicken breast fillets
- 2 egg whites
- 2 tablespoons dry white wine
- 1 tablespoon toasted sesame salad oil
- 2 teaspoon soy sauce
- 1 teaspoon red pepper sauce
- 1/2 teaspoon five spice powder (or ground ginger)
- 4 tablespoons each bread crumbs and sesame seeds
GREEK POTATO SALAD

- 2 lbs. new potatoes
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 3 tablespoons mayonnaise
