- 1 4-1/2 lb. beef tenderloin, trimmed
- 1/2 cup plus 2 tablespoons olive oil

- 1/4 teaspoon pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon dried whole thyme
PORK MEDALLIONS WITH MUSHROOMS AND ROSEMARY

In medium bowl gradually whisk broth into tomato paste
- 2/3 cup chicken broth
- 1 tablespoons tomato paste
- 1/4 teaspoon dried rosemary crushed
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground pepper
- 8 oz. pork tenderloin cut crosswise into 4 pieces
- 1 tablespoon seasoned dry bread crumbs
- 1 tablespoon olive oil

BARBECUE CHICKEN WINGS

- 3/4 cup chili sauce
- 2 tablespoons honey

- 5 drops hot pepper sauce

- 1 tablespoon fresh herbs, such as rosemary and thyme

BEEF STROGANOFF

- 1 (16 oz.) challah bread loaf cubed
- 1 (8 oz.) package cream cheese

- 4 cups half and half

- 1/4 cup maple syrup
- 2 cups fresh strawberries sliced
- 1 (10 oz.) jar strawberry preserves
HOT SOUR SOUP

- 4 Chinese mushrooms, soaked in warm water 20 minutes

- 1/4 cup plus 1 tablespoon unsalted butter
- 2 large shallots minced
- 6 tablespoons all-purpose flour
- 1/4 cup dry sherry
- 3-3/4 cups chicken broth
- 6 springs plus 1 tablespoons minced flat-leaf parsley
- 1 sprig fresh thyme
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper, plus more to taste
- Pinch cayenne pepper
- Pinch freshly grated nutmeg
- 1/2 lb. shitake mushrooms trimmed and cut into 1/2” slices
- 1/2 cup heavy cream
- 4 cups cubed poached chicken
- 1 tablespoon snipped fresh chives
- 10 springs parsley
- 2 sprigs fresh thyme
- 1 small onion halved
- 1 small carrot halved
- 1 stalk celery halved
- 3 lbs. chicken breast halves on the bone and fat trimmed
