Sweet Potato/Yam Souffle

Mix all base ingredients until blended together and pour into a greased 2 1/2 quart baking dish
- BASE:
- 3 cups cooked, mashed sweet potatoes or yams (1-40 oz. can & 1-15 oz. can)
- 1 cup sugar
- 1/2 tsp salt
- 2 eggs
- 1/3 stick melted butter
- 1/2 cup milk
- 1 tsp vanilla
- TOPPING:
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/2 cup chopped pecans
- 1 stick butter

- 1 3/4 cups (16 oz can) Solid Pack Pumpkin
- 3/4 cup sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger

- 1 1/2 cups (12 fl. oz can) undiluted Carnation Evaportated Milk

- Coarse salt and freshly ground pepper
- 1 tblsp fresh thyme leaves

- Flaky sea salt, such a s Maldon for serving
- OPTIONAL: sour cream
Sour Cream Pecan Coffee Cake

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup butter, room temperature
- 1 cup granulated sugar
- 2 eggs
- 1 cup sour cream
- 1 tsp vanilla
- 1/3 cup packed brown sugar
- 1/4 cup sugar
- 1 tsp cinnamon
- 1 cup finely chopped pecans
Oriental Cabbage Salad

Melt in skillet butter; add noodles, almonds, sunflower seeds and sesame seeds and cook until lightly browned
- 2 pkgs Top Ramen Soup (without seasoning), broken into pieces
- 1 cup sliced almonds
- 1 cube butter or margarine
- 1/2 cup sunflower seeds
- 1/2 cup sesame seeds
- 1/2 cup oil
- 1/4 cup vinegar
- 1/4 cup sugar
- 2 tbsp soy sauce
- 1 large head of cabbage, washed and chopped
Chocolate Haystack Crunchies

- 1 pkg 12 oz semi-sweet chocolate chips
- 3 tblsp smooth or crunchy peanut butter
- 1 pkg 6 oz Chow Mein noodles about 3 1/2 cups
- 1 cup lightly crushed thin pretzels or crushed peanuts
Zucchini Casserole

Beat eggs and add oil. Then add rest of ingredients except cheese
- 4 cups zucchini-grated
- 1 cup Bisquick
- 1/2 cup oil
- 4 eggs-beaten
- 2 tsp dyhdrated onion
- 1 tsp Pinch of Herbs
- salt and pepper to taste
- 1 small ball mozzarella cheese-grated
Refrigerator Oatmeal

No cook oatmeal which is eaten cold
- BASIC RECIPE:
- 1/4 cup old fashioned rolled oats (not instant, quick or steel-cut)
- 1/3 cup milk (any kind will work)
- 1/4 cup plain Greek yogurt
- 1 1/2 tsp chia seeds
- OPTIONS:
- Blueberry Maple
- 2 tsp maple syrup
- 1/4 cup blueberries
- Banana Peanut Butter
- 1/4 cup diced Bananas (about 1/2 small banana)
- 1 tsp Honey
- 1 tblsp Peanut Butter or Powdered Peanut Butter (PB2=powdered peanut butter which has 85% less fat than regular peanut butter)
- Raspberry Vanilla
- 1/4 tsp vanilla
- 1 tblsp raspberry jam
- 1/4 to 1/3 cup raspberries
- Apple Cinnamon
- 1/4 cup unsweetened apple sauce
- 1/2 tsp cinnamon
- 1 tsp honey
- Banana Cocoa
- 1/4 cup diced banana (about 1/2 of 1 small banana)
- 1 tblsp cocoa powder
- 1 tsp honey
- Mango Almond
- 1/8 tsp almond extract
- 1 tsp honey
- 1/4 cup diced mango (about 1/2 of 1 small mango)
Caramel Brownies

- 1 pkg. German chocolate cake mix--I use the kind with pudding in the mix.
- 1 c. chopped nuts (divided)
- 1 11 oz. bag caramels
- 3/4 c. butter, melted
- 12 oz. pkg. chocolate chips

- 16 oz box Ditalini Macaroni OR chose a style of macaroni
- 1 1/4 cups celery, diced
- 1 4 oz jar Dromedary Diced Pimientos, drained
- 1 medium onion, quartered
- 1 jar sweet pickle relish
- 1 16 oz jar sweet Gherkin pickles
- salt and white pepper to taste
- Paparika
- Mayonnaise
